Ingredients

  1. 3 smoked turkey wings
  2. 12 bunches collard greens, washed and cut
  3. 1/2 cup diced white onion
  4. 1/2 cup diced green bell pepper
  5. 1/2 cup diced roasted red bell pepper
  6. 1 tablespoon butter-flavored oil
  7. 1/2 tablespoon salt
  8. 1/2 tablespoon sugar
  9. 1 teaspoon garlic powder
  10. 1/2 teaspoon smoke flavoring
  11. 1/8 teaspoon black pepper
  12. 1/8 teaspoon cayenne pepper

Instructions

  1. Boil the smoked turkey wings in a large stock pot with 1 gallon of water for 20 minutes at medium heat. Add the collard greens to the pot and let them cook down for 10 to 15 minutes. Add the onions, green peppers, roasted red peppers, oil, salt, sugar, garlic powder, smoke flavoring, black pepper and cayenne pepper and stir. Cook over medium heat until the collards are tender, about 1 1/2 hours.
