A simple marinade highlights cod but try with tilapia, mahi mahi or any white fish.

Ingredients
- ¼ cup lemon juice
- 1 tablespoon olive oil
- 4 teaspoons Dijon mustard
- 1-½ tablespoons Spice Islands® Dill Weed
- 1 teaspoon Spice Islands® Garlic Powder
- ½ teaspoon Spice Islands® Lemon Pepper Seasoning
- ¼ teaspoon sugar
- 4 pieces (6 ounces, each) cod fillets
Instructions
- Combine all ingredients except cod in a large resealable plastic bag and mix. Add cod. Seal and marinate in refrigerator for 20 minutes. Remove fish from bag: discard marinade. Place fish on a broiler pan or grill pan coated with cooking spray. Broil or grill for 4 minutes on each side or until fish flakes easily when tested with a fork.
Reviews
I use the thicker portion of the cod (at least 1” thick), weight of .85 lbs for two people. I include a splash of white wine in the marinade. After cooking this several times I found that baking the cod in a 400° oven for 14 minutes, and then placing under a low broiler for approximately 2 minutes (internal temp of 145°) yielded a wonderfully cooked dinner.

Excellent! We found 3 minutes per side to be long enough, and on a thinner filet, 2 minutes on each side. Seasoning are perfect!
Loved it. We will make this again and add a little more lemon pepper and Dijon mustard. Used the broiler and 4 minutes each side was too long.
