Bermuda Fish Cakes

Ingredients

  1. 3 ounces chopped onion
  2. 1/2-ounce chopped garlic
  3. 1 tablespoon olive oil
  4. 1-ounce curry powder
  5. 1-ounce fresh chopped thyme
  6. 1-ounce fresh chopped parsley
  7. 1 pound cooked, roughly smashed potatoes
  8. 8 ounces salted cod fish (soaked and rinsed 3 times over the previous 24 hours in the refrigerator, poached in water for 8 minutes)
  9. Salt and pepper, to taste
  10. Cream
  11. 2 ounces flour
  12. Oil, for frying

Instructions

  1. In a heavy bottom pan, saute the onion and garlic until cooked. Add the curry powder and herbs and cook for 1 minute. Add the potato and flaked cod fish to the pan and mix together. Season with salt and pepper. Add enough cream to make the mixture workable. On a floured surface, shape the fish cakes and fry in shallow oil on each side for 5 to 6 minutes over a medium heat.

One out of two of us liked it. I think I went heavy on the curry. It was nice with homemade applesauce and a dollop of cream cheese. (Perhaps sour cream would be better)

I am a Bermudian, and I have tasted many, many codfish cakes in my lifetime and I will say that this recipe is the best I have tried so far. Delicious recipe!    I rate this 5 Stars

I found this recipe yummy! I eyeballed the amount of the herbs though. I didn’t have cod so I used whiting filets. I seasoned it with salt and let it stand for about 15 minutes and then poached it in chicken broth to give it more flavor. I will certainly do this recipe again. I’ll use Cod next time.
