Ingredients

  1. 65 medium shrimp, peeled and deveined
  2. 2 cups flour
  3. 1/2 quart fry batter mix (flour, cornmeal, salt, spices)
  4. 6 ounces coconut milk
  5. 1/2 pound coconut flakes
  6. Oil, for frying
  7. Honey Mustard Horseradish Sauce, recipe follows
  8. 1 cup mayonnaise
  9. 1 1/2 cups honey
  10. 1/2 cup Dijon mustard
  11. 1/2 cup horseradish

Instructions

  1. Heat oil to 375 degrees F.
  2. Dredge shrimp in flour to coat. Mix Drakes Fry batter and coconut milk together, adding water, if necessary, to create cake batter consistency. Dip shrimp in batter mixture. Roll shrimp in coconut flakes to cover.
  3. Deep fry to a golden brown. Serve with a Honey Mustard Horseradish Sauce.
  4. Mix all ingredients well.

Very much enjoyed using the coconut milk – held everything together very well. Would recommend seasoning the shrimp as well, with a little seasoned salt and pepper to add another dimension of flavor.

If you love shrimp and coconut, this is the recipe for you. The dipping sauce is to die for. (If you have leftover sauce, use it to marinade chicken and steak.) I did this for a group of friends and they love it. Now, they always ask “can you make your coconut shrimp?” ssshhh!!!

Simple elegance. Passable as fine cuisine without the high price. I used fresh shrimp from the market, which made it melt-in-your-mouth delicious. I tend to be scattered, but this was easy to follow for me.
