Ingredients
- 24 ounces frozen pineapple chunks
- One 15-ounce can coconut cream
- 1/2 lime, juiced
- 1/2 cup pineapple juice
- 2 cups semi-softened vanilla ice cream
- 1/4 teaspoon kosher salt
- Toasted shredded coconut, for garnish
- Toasted and chopped macadamia nuts, for garnish
- Dried pineapple rings, for garnish
Instructions
- In a blender, combine the frozen pineapple, coconut cream, lime juice, pineapple juice, vanilla ice cream and salt until smooth and creamy (see Cook’s Note). Transfer the mixture to a piping bag with a large star tip and pipe into 5 to 6 glasses. Garnish with the toasted coconut, macadamia nuts and a dried pineapple ring on the side of each glass.

I’m sorry to say I didn’t care this at all. It tasted like eating frozen pineapples and nothing else. Oh, well, they can’t all be winners.
