Yield: Makes about 15-20 squares.

Ingredients

  1. 1/2 cup butter, softened
  2. 1 lb sweet rice flour
  3. 2 1/2 cup sugar
  4. 1 tsp. baking powder
  5. 3 cups milk (fresh or evaporated)
  6. 5 eggs, beaten
  7. 1 tsp. vanilla
  8. 1 cup coconut flakes

Instructions

  1. Preheat oven to 350 F. Mix all ingredients in a greased 13 x 9 pan. Bake 1 hour at 350F, or until a toothpick inserted in the center comes out clean. When cool, cut into squares.

Yes, replacing the milk with coconut milk is the way to for me. I did make it both ways, and my critics enjoyed the one made with coconut milk better. Thank for the recipe.

Our neighbors are from the Philippine s, and we always swap different meals….mine are always Italian. I wanted to surprise them with something from their country. The Bobingka was so easy to make, and delicious. The hardest part was finding the sweet rice flour. I finally ordered it on Amazon.

I’ve looked all over the ‘net for recipes for Biningka and love this one the best. It’s so easy to make and you have a wonderful treat in just over an hour. I also use a can of coconut milk for part of the milk and find it quite delicious.

This is a pretty good and simple recipe with positive results from guests. I personally like to substitute the evap milk for a can of coconut milk and it works well.
