Air Fryer Coconut Shrimp

These air-fryer coconut shrimp are the perfect combination of savory and sweet. Serve with a sweet chile sauce, for dipping.

Ingredients

  1. 1 pound large shrimp (16/20 count), peeled and deveined, tails on
  2. Kosher salt and freshly ground black pepper
  3. 1 cup sweetened shredded coconut
  4. 1/2 cup panko breadcrumbs
  5. 1/2 cup all-purpose flour
  6. 2 large eggs
  7. Nonstick cooking spray, for the shrimp
  8. Sweet chile sauce, for dipping

Instructions

  1. Pat the shrimp dry between a couple of paper towels, then season with a pinch of salt and a few grinds of pepper.
  2. Pulse the coconut and panko in a food processor until finely chopped and uniform in size. Transfer to a shallow bowl. 
  3. Whisk the flour with 3/4 teaspoon salt and few grinds pepper in another shallow bowl or a baking dish. Whisk the eggs with a pinch salt in a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten egg. Dredge in the coconut-panko mixture, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and continue until all the shrimp are coated. 
  4. Preheat a 3.5-quart air fryer to 385 degrees F. Working in batches, place some of the shrimp in the fryer basket in a single layer, then spray lightly with nonstick cooking spray. Cook, flipping halfway through, until the shrimp are golden brown and cooked through, about 10 minutes.  
  5. Serve the coconut shrimp with some sweet chile sauce for dipping.

Love this recipe! Definitely cooked less time than suggested. Nice change for dinner. Great with the store bought sweet chili sauce.

This was the first recipe I made in my AirFryer and it was delicious! Based on other user’s reviews I cooked for 8 minutes instead of ten. I’d also add a
bit more salt to the Panko mixture next time. I didn’t feel like pulling out the food processor so I skipped that step and it still turned out. Will definitely be making again!

I cooked it for 5 minutes at 390* and it was overdone with some burnt coconut. The recipe was good otherwise. But I’ll reduce the temperature and cooking time in the future.

Very good, 10 minutes in the Air Fryer seemed to really brown the coconut breadcrumbs coating.  I cooked mine for 6-8 minutes.  Air Fryer cooks really fast.
