Strawberry Cobbler Squares

Ingredients

  1. 3 cups chopped strawberries
  2. 1/4 cup granulated sugar
  3. 1 tablespoon cornstarch
  4. 1 lime, zested and juiced
  5. 2 1/2 cups all-purpose flour
  6. 2 1/2 sticks (20 tablespoons) salted butter, cubed and chilled, plus more for the pan
  7. 1 cup packed brown sugar
  8. 1 tablespoon baking powder
  9. 1/2 cup heavy cream
  10. 2 tablespoons turbinado sugar
  11. 1 1/2 cups powdered sugar
  12. 2 to 3 tablespoons fresh lime juice

Instructions

  1. For the filling: Preheat the oven to 375 degrees F.
  2. Add the strawberries, granulated sugar, cornstarch and lime zest and juice to a bowl. Toss to combine and set aside.
  3. For the crust and crumble: In a food processor, combine the flour, butter, brown sugar and baking powder. Pulse until a loose crumb forms; continue to pulse as you add the cream.
  4. Grease a 9-by-13-inch pan with butter. Dump two-thirds of the flour mixture onto the prepared pan and press flat. Top with the strawberry mixture, spreading it into an even layer. Sprinkle over the remaining flour mixture, followed by the turbinado sugar.
  5. Bake the bars until the top is golden and the strawberry layer is thick and bubbling, 28 to 30 minutes. Remove and allow to cool.
  6. For the icing: Whisk together the powdered sugar and lime juice until smooth.
  7. Cut the cobbler into small squares and drizzle with the icing. Add to a platter and serve.

I did not like this recipe. I used a cherry filling which turned out great. It’s the crust and topping I didn’t like and I made it according to the directions. It was very cakey and bitter. I thought the amount of baking powder in the recipe seemed high but I followed the directions anyway. Only one person liked this dessert out of the five people who ate it.

This was delicious my entire family loved it .I will definitely be making this again . I had to bake it a little longer almost 40 minutes. It was well worth the wait it will be more delicious when strawberry ‘s are in season.

I made this with 1 cup each of strawberries, blackberries and blueberries, because it’s what I had on hand.  I also used lemon zest instead of lime. I made a much smaller amount of glaze, and used lemon juice. It came out great!

I saw the episode this morning and had to try it. Delicious! I did deviate with the icing. I used the same amount of powdered sugar, but instead of just lime juice, I used the ‘syrup’ that formed from the strawberries sitting, added the juice from two more limes and 2 tbsp of low fat milk. Fantastic strawberry icing that everyone loved! Plus, it was pink. Right in time for Valentine’s Day.

These were SO delicious – the entire family loved them. I decided the first batch of glaze may have used old powdered sugar (weird taste). The second batch was good. But, for both batches it took a about 5 tbs of lime juice to get the right consistency (not 2-3). Def. a winner!
