Apple Berry Cobbler

Ingredients

  1. 1 cup all-purpose flour
  2. 1 tablespoon baking powder
  3. 1/2 teaspoon kosher salt
  4. 1 1/2 cups granulated sugar
  5. 1 cup half-and-half
  6. 1/2 cup (1 stick) unsalted butter, melted
  7. 2 cups mixed berries (blackberry, raspberry and blueberry work well)
  8. 1/2 cup brown sugar
  9. 1 tablespoon freshly squeezed lemon juice
  10. 1 teaspoon ground cinnamon
  11. 1 teaspoon ground nutmeg
  12. 3 small Golden Delicious apples, peeled and sliced (about 3 cups)

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Whisk together the flour, baking powder, salt and 1 cup granulated sugar in a bowl. Stir in the half-and-half, mixing just until combined.
  3. Add the butter to a 9-by-13-inch baking dish, tilting to coat evenly. Pour the batter over the butter in the baking dish, then set aside.
  4. Bring the berries, brown sugar, lemon juice, cinnamon, nutmeg, apples, 2 tablespoons water and the remaining 1/2 cup granulated sugar to a boil. Cook for 2 minutes more. Pour the fruit and syrup over the batter in the baking dish without disturbing the batter layer.
  5. Bake until golden brown and puffed on top, 45 to 50 minutes. Let cool slightly before serving.

It should be a tsp of baking powder not tlb. I watched the show where she made this and she said teaspoon..

This dessert was a great hit for a dinner party I attended where I was signed up to bring the dessert. I do have to ask though about the part of pouring the fruit over the batter. The batter came up and baked nicely all around the rim of the dish, but not in the middle – it was just fruit. It still tasted great, but would love advice on how to pour it better next time I try and make it?

You can also do this Recipe in a Dutch Oven! It is a Great Recipe, coming out very tasty! I always spoon or ladle my fruit mix in, working to keep the intact integrity of the dough mix. I have never had any boil over doing the fruit mix loading this way.

A tablespoon of baking powder is a lot, but I followed the recipe to a T. The batter flowed over the top of the 9 X13 pan and burned all over the bottom of my oven. Once it cooled, it sunk with very little of the batter left, just fruit and a bad mess in oven. I would use maybe 2 teaspoons of baking powder? Even that is quite a bit for a cobbler.

I’m wondering what I did wrong. My cobbler was dark brown and flat after cooking for 45 minutes. When I emptied the batter into the dish, it was full of bubbles. I’m wondering if the batter sat in the bowl too long while I was cooking the fruit. It tasted good, but didn’t look good and was flat.

Very easy and delicious! I made this with Frozen berries and a couple of fresh apples I had on hand. Easy to pull this together without having to shop for much. Anytime a dessert has fruit you always feel better about eating it
