Ingredients
- Softened butter for greasing pans, plus 1 1/2 tablespoons unsalted butter, melted
- 1 1/2 cups all-purpose flour, sifted
- 3/4 teaspoon kosher salt
- 1 teaspoon chopped fresh thyme leaves
- 3 extra-large eggs, at room temperature
- 1 1/2 cups whole milk, at room temperature
Instructions
- Preheat the oven to 425 degrees F.
- Generously grease aluminum popover pans or custard cups with softened butter. You’ll need enough pans to make 12 popovers. Place the pans in the oven for 2 minutes to preheat. Meanwhile, whisk together the flour, salt, thyme, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.
- Serve hot.

The flavor was excellent!! I tried to use liquid egg substitute instead of real eggs and it didn’t pop up. We liked this so much with the added Parmesan cheese that I even ordered real popover pans. I tried to use cupcake pans and it didn’t climb. Can’t wait to get the real pans so I can try again!!!
Great flavors! Everyone loves the thyme. I added a bit if Parmesan cheese to the mix. I didn’t have a popover pan so used a muffin tin and cooked in toaster oven. 425 was too high in the toaster oven so reduced to 400 and they were perfect. I filled them 3/4 of a way full and they were fine. Use plenty butter on the pan!
I tried to eat as many as I could. I love popovers and this recipe was perfect.
