Ingredients
- 2 pounds red new potatoes, quartered
- 1/4 cup extra-virgin olive oil
- Leaves from 1/4 bunch fresh thyme
- Salt
Instructions
- Preheat the oven to 375 degrees F. Toss together the potatoes, oil, and thyme, and sprinkle with salt. Dump the potatoes out on a baking sheet and roast until tender and crisp on the edges, 30 to 40 minutes.

Having grown up with meat and potatoes, this is my new go-to recipe for potatoes. I use small Yukon Gold potatoes and fresh thyme from my garden-absolutely delicious and easy!

Very easy, I used sweet and regular potatoes that I had on hand and baked them for about hr. Everyone liked them, the rosemary and thyme work well together.

I made these with a lemon pepper chicken saute recipe and the roasted Brussels sprouts with bacon from Sunny Anderson, and the meal was absolutely delicious! What I liked best about these potatoes is that they were very simply seasoned and they didn’t overpower any of the other dishes on the plate. Everything was equally delicious!
I make these for company all the time..I look like I can actually cook! Kids love them too. Great last minute covered dish!
These are so easy and delicious. Only thing I add is some ground sea salt. I make these so often my husband finally said the other night “No more potatoes!”, and he loves them. Thank you for such a quick and easy recipe with basic ingredients that I always have on hand.

Simple and straightforward. I made it for Christmas Day, juggling a rib roast and oven limitations. The potatoes forgave interval cooking, holding and reheating and were just the note with the roast.
