I halved the recipe to test it out before bringing it to a gathering. I used 1/2 c each cream cheese and Neufchâtel. I used 1/2 package ranch dressing mix, 1/2 c red, yellow and orange peppers, 1 green onion, and 2 1/2 10” tortillas. I thought there was too much filling, they were soggy, and a little bland.
The second time I made them, I placed the peppers on paper towels to absorb excess moisture after finely dicing them, added 2 strips crispy bacon chopped fine, and tried to roll them more tightly, using 4 10” tortillas. They’re chilling now. I’ll let you know how they came out.

Make these for Christmas and is a huge hit, around spring time I use yellow and orange peppers instead of the red and green.
I made them for my job Xmas party and they loved them I had to give out the recipe
Kind of gummy
Very easy to make! I used spinach flour tortillas just for extra festive color. They were a hit at my Christmas Open House this December, all gone at the end of the evening and several of my friends asked for the recipe! I’ll definitely be making these again today for Christmas Day with my family!
