Holiday Goat Cheese Log

It was originally intended as a holiday treat, but it became so well-liked that it is now offered at all important family events. I adapted the recipe from one in a cookbook from Colonial Williamsburg by leaving out the peppercorns and adding fruit. Serve with crackers and garnish with parsley sprigs.

Ingredients

  1. ½ cup smoked almonds
  2. 2 tablespoons roughly chopped fresh parsley
  3. 2 tablespoons roughly chopped fresh chives
  4. ¼ cup dried cherries
  5. 1 (8 ounce) log plain goat cheese

Instructions

  1. Pulse almonds in the bowl of a food processor until chopped. Add parsley and chives; continue to pulse until incorporated. Add cherries and process until everything is finely chopped and you have a nice mixture of red and green.
  2. Pour nut mixture onto a flat work surface and spread into a thin layer.
  3. Roll goat cheese log in the nut mixture until fully covered. Carefully pick it up and tap the ends of the log into the nut mixture to cover. Place on a serving dish.
  4. Any dried red fruit will work in this recipe. I think cherries taste the best, but I’ve made it with sun-dried tomatoes and with cranberries.

Very easy to put together and tastes so good! I used ghost pepper almonds, and the heat just added to the flavor. I didn’t bother chopping everything first. I put everything all at once directly in my Ninja blender and it all blended nicely.
