Beef-Chorizo Nacho Topping

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 1 pound ground beef
  3. 8 ounces fresh chorizo, casings removed
  4. Kosher salt and freshly ground pepper
  5. 1 small onion, chopped
  6. 1 clove garlic, minced
  7. 2 tablespoons tomato paste
  8. 2 tablespoons chili powder
  9. 2 teaspoons ground cumin
  10. 1 teaspoon ground coriander
  11. 1 teaspoon smoked paprika
  12. 1 8-ounce can tomato sauce

Instructions

  1. Combine the olive oil, ground beef and chorizo in a skillet over medium-high heat. Cook, stirring, until browned, 5 to 6 minutes. Season with salt and pepper.
  2. Add the onion and garlic to the skillet and cook, stirring, until softened, about 4 minutes. Clear a space in the pan and add the tomato paste, chili powder, cumin, coriander and paprika; cook, stirring, until incorporated. Add the tomato sauce and 1 cup water; stir everything together and simmer until thickened, 6 to 7 minutes.
