Ingredients

  1. 6 ounces unsweetened chocolate
  2. 1 cup butter
  3. 2 cups sugar
  4. 2 teaspoons vanilla extract
  5. 4 eggs
  6. 1 1/2 cups all-purpose flour
  7. 1/2 teaspoon salt
  8. 1 cup mini chocolate morsels
  9. 2 (8-ounce) packages cream cheese, softened
  10. 1/3 cup sugar
  11. 2 eggs
  12. 2 tablespoons creme de menthe
  13. 2 drops green food coloring
  14. 1/4 cup butter, softened
  15. 1 1/2 cups confectioners’ sugar
  16. 2 ounces unsweetened chocolate, melted
  17. 1 teaspoon mint extract
  18. 1 tablespoon milk, plus more to thin
  19. 8 candy canes, crushed, for garnish

Instructions

  1. Preheat oven to 350 degrees F.
  2. Brownies:
  3. Melt the chocolate and butter together over low heat, stirring frequently. Remove from heat to cool slightly.
  4. In the bowl of a stand mixer, combine chocolate-butter mixture with sugar, vanilla, and eggs on medium speed for 1 minute, scraping down the sides of the bowl frequently. Mix in flour and salt and beat for 30 seconds. Scrape bowl and beat for 1 minute. Stir in chocolate chips.
  5. Mint Filling:
  6. Beat the cream cheese until smooth with electric mixer. Scrape sides of bowl and beat in sugar, eggs, and creme de menthe until smooth and fully blended. Add 2 drops food coloring to heighten filling color.
  7. Spread half of brownie mixture in a greased 13 by 9 by 2-inch pan. Pour mint filling on top of brownie batter and spread to edge. Carefully spread the other half of the brownie mixture on top of the mint filling. Bake for 40 to 45 minutes until sides pull away from pan and a toothpick inserted in the center comes out clean. Cool in pan.
  8. Frosting:
  9. Beat butter until smooth with electric mixer. Add sugar and melted chocolate to butter and beat. Slowly add mint extract and enough milk, 1 tablespoon at a time, to make desired consistency. Spread frosting on top of cooled chocolate mint brownies. Sprinkle the crushed candy canes on top of frosting. Cut the bars into 8 rows by 6 rows and serve.

Ok so fisrt I tried it with the unsweetened chocolate and they were ok???
But then I tried them with just regular sweet chocolate and they were a huge hit at my chocolate party.
Please recomend any other recipes to me thanks

I kept messing things up on the recepie. First, I used all unsweet chocolate, even in the icing, and totally forgot the mini chocolate chips. I also used too much creme de menthe. They ended up being fantastic anyway! Next time will use the correct about of liquor and maybe add more cream cheese because I adore cheese and couldn’t really taste it.
For those who felt the mixtures were ‘soupey’ you must have been overzealous in pouring out the different layers. I know I was extremely careful in spreading each layer out thinly and slowly.

i ended spending about 20 bucks making these brownies because i didn’t have any creme de menthe but they came out prettty good so i didn’t mind. but they did taste a bit too much like listerine. and what the other people mentioned about it being difficult to layer it, well it was. but it was okay because the frosting covers it anyways.

These are so good. I read the recommendation to make sure to reserve more of the brownie mixture for the top layer – that worked well. I also wasn’t paying attention and made 4 layers – brownie, mint, brownie, mint – that worked great!

not my favorite recipe. The brownie part was good, but didn’t care for the cream cheese filling as much as I thought I would.

I thought this recipe was pretty good. My husband LOVED it. I will make a couple changes next time. I would use andies candies instead of the candy canes. I didn’t like that the candy canes were so crunchy. I would also just drop the remaining 1/2 of the brownie batter by teaspooons on top of the mint filling. If you try spreading the remaining 1/2 of the batter, it does’nt spread well enough. Good with e bowl of vanilla ice cream!

Very good brownies. A little bit more effort to make (you dirty a few bowls) but worth the effort. Makes a very festive looking brownie!
