Ingredients
- 1 1/2 cups cake flour
- 1 1/2 cups sugar
- 3/4 cup Dutch process cocoa powder
- 1 1/2 teaspoons baking soda
- 1 1/2 sticks (12 tablespoons) butter, room temperature
- 3/4 cup buttermilk
- 2 large eggs
- 2/3 cup freshly brewed coffee, cooled to room temperature
- Chocolate Pudding Frosting, recipe follows
- 1 pint heavy whipping cream, very cold
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- One 3.9-ounce box dry pudding mix, chocolate fudge flavor
Instructions
- Preheat the oven to 350 degrees F.
- Line two 12-cup muffin pans with cupcake liners and set aside.
- Sift together the flour, sugar, cocoa powder and baking soda and add to the bowl of a stand mixer. Add the butter, buttermilk and eggs and beat on low until moistened. Raise the speed to medium and beat until light and fluffy, 2 to 3 minutes.
- Add the coffee and beat until fully incorporated. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake until a toothpick inserted into the center of a cupcake comes out clean, 22 to 25 minutes. Transfer the pans to wire racks and allow the cupcakes to cool completely.
- Remove the cupcakes from the muffin pans and spread each with frosting.
- In a stand mixer fitted with a whip attachment, whip the cream at high speed until light and fluffy, about 3 minutes. Add the sugar, vanilla extract and pudding mix and whip until smooth.

These are some of the most delicious, moist cupcakes I’ve ever made! They tasted amazing, all my coworkers and myself loved them. The frosting could have been a little better I think, but it tasted just fine as well.

Very good, but I couldn’t taste the coffee. I creamed the butter and sugar together first before I added the other ingredients to the mixer. The frosting is fabulous – I wonder if you don’t have to use heavy whipping cream? Might try half and half next time because the pudding mix seems to be what makes the frosting firm. Not sure. I put it in a piping bag and made swirls from the center out and people said, “where did you buy these?!?!?!?!?” and they couldn’t believe it when I said I made them. So they were good.
These cupcakes were really good. I used dark chocolate cocoa because I wasn’t able to find the Dutch cocoa. Thanks Trish. Love your recipes.
I made the icing and put on vanilla cup cakes. We all liked it and I will be making it again.

I liked these cupcakes. I don’t want to deter anyone from making them, but the airy consistency of the cupcake made it similar to a devil dog but not that sandy texture. I thought that the frosting complimented the cupcake. I used heavy cream for the frosting, perhaps that made a difference , as my frosting was a bit lighter colored and air bubbly. My family enjoyed these cupcakes I will make them again.
