S’mores Chocolate Chip Cookies

Ingredients

  1. 1 cup (2 sticks) unsalted butter, at room temperature
  2. 3/4 cup packed light brown sugar
  3. 3/4 cup granulated sugar
  4. 2 large eggs
  5. 1 teaspoon baking soda
  6. 1 teaspoon vanilla extract
  7. Pinch salt
  8. 3 cups all-purpose flour
  9. 1 1/2 cups coarsely-smashed graham cracker pieces (from about 1 sleeve), plus 36 small graham cracker squares
  10. Marshmallow creme, for topping cookies
  11. One 8-ounce milk chocolate bar, broken into pieces

Instructions

  1. Preheat the oven to 350 degrees F.
  2. With an electric mixer, beat together the butter and sugars in a large bowl until smooth and fluffy, then beat in the eggs. Add the baking soda, vanilla and salt to the butter mixture, mixing just until combined. Add the flour and smashed graham crackers and slowly mix together until combined.
  3. Drop tablespoon-sized dollops of batter 2 inches apart on ungreased baking sheets. Dollop some marshmallow creme onto each of the cookies, and press a piece of chocolate and graham cracker into the marshmallow.
  4. Bake until just set in the center, 7 to 8 minutes. Allow to cool slightly, then transfer to a wire rack to cool completely.

Loved them. Took them to work for a baking competition and I won. My husband and kids loved them as well. Next day had to make more and doubled the recipe took more to work for those that didn’t try them and for us at home. They were a hit. Delicious

These were excellent.  As one reviewer suggested, press down as mine didn’t spread much either. On the third batch to the oven I made a  small well in the center to put the marshmallow creme.  It worked well and the cream didn’t get too messy.  They are delicious and also look spectacular.

These were very delicious just a few things…

-They didn’t spread very much like hers did in the show so next time i would press them down with my hand
-I didn’t add graham cracker to the top just fluff and chocolate
-Next time I would add more chocolate to the top
