Potato Chip Chocolate Chip Cookies

Ingredients

  1. 2 sticks (1 cup) unsalted butter, softened
  2. 3/4 cup granulated sugar
  3. 1/2 cup packed light brown sugar
  4. 2 teaspoons vanilla extract
  5. 2 large eggs
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon kosher salt
  9. 1 cup semisweet chocolate chips
  10. 4 cups crushed potato chips (8 ounces), such as Lay’s

Instructions

  1. Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
  2. In the bowl of a stand mixer, cream together the butter, granulated sugar and brown sugar on medium-high speed until light and fluffy, 3 to 5 minutes. Add the vanilla and eggs and beat on medium speed until just combined. Add the flour, baking soda and salt, then mix on low speed until just combined. Stir in the chocolate chips and 2 cups of the crushed potato chips. Put the remaining 2 cups crushed potato chips in a shallow bowl.
  3. Roll the dough into 2-inch balls, then roll them in the remaining potato chips so they are completely coated. Place the cookies 2 inches apart on the prepared baking sheets and bake until golden, 12 to 15 minutes. Let cool for 5 minutes, then transfer to a wire rack to cool completely.

I’ve been making these for a few years and we ( and everyone we’ve shared them with!) LOVE them. I just made them again today for Christmas only I used the Christmas mint M & M’s versus chocolate chips. They’re perfect! Love this recipe. They come out perfect every time. ( as do all the recipes I’ve made from The Pioneer Woman.

Well I made them once, and have been asked to make them again. I used dark chocolate chips 60%cacao and he wants me add the whole package. Being at high altitude i always add flour until they are stiff enough. They rose beautifully. We live in a cabin without HVAC so it’s cool when I bake so no spreading. He loved the potato chips dark chocolate combo.

These are not on top of list to be made again. Tasted like a chocolate chip cookie with potato chips in it. Made some with potato chips on outside and some without the chips on outside. Preferred the ones not rolled in potato chips. The chips on outside were gummy and chewy, did not add anything to cookie. The dough is buttery, and sticky. Definitely need to chill dough or would probably spread too much. I chilled dough about an hour then baked. Used 1 1/4 cup chocolate chips and could probably have used a little more. Sorry but this recipe isn’t for me.

This was more like a chocolate chip cookie with potato chips in it. Very disappointing. It tasted nothing like a delicious potato cookies. Potato cookies do not include eggs. Love Ree’s recipes. This missed the mark for me

I made the potato chip cookies. I didn’t really like them, maybe to much potato chips. So I made a batch without rolling them in the chips. I think they tasted better. Sorry.

I live in a high altitude, additional flour is always needed even with boxed cakes & brownies. Half cup of flour to roll dough into balls was perfect.

I made 12 dozen of these cookies, and here are my take-aways….This is a very beautiful dough but more buttery than I expected, which means your cookies will spread flat and get crispy unless you chill the dough really well. I used a cookie scoop to drop the balls into a big bowl of crushed chips, then put the dough balls in zip-lock overnight to chill. You will want to use cool or cold trays, also. Do NOT use a warm tray. Have enough trays to rotate out. Also, the quality of your tray will definitely make a difference in how quickly the cookies spread and brown. I used silicon mats rather than parchment, which helped the cookies from spreading. If I make the cookies again, I would use more chocolate chips in the dough and probably another half-cup of flour or so. You can double the recipe and it will still fit into your stand mixer. However, I dumped the dough into a bowl when I got ready to follow in the crushed chips and chocolate chips.

These are amazing! We had some salted caramels Lay’s potato chips we wanted to use. Added salted caramel morsels instead of chocolate and OMG are these good!

I’ve made these several times and they are always a hit. I made the cookies as the recipe states and I’ve also added additional fun ingredients. Try adding chopped peanut butter cups and Reese’s Pieces or peanut butter baking chips to the batter. Also, chill the dough for about an hour before baking.

These cookies are delicious! I didn’t mix the chip into the cookie dough and they still turned out scrumptious. Just the right amount amount of salt and sweet.
