No-Bake “Cow Pile” Cookies

Ingredients

  1. 2 cups sugar
  2. 1 stick unsalted butter
  3. 1/3 cup cocoa powder
  4. 1/2 cup milk
  5. 1 teaspoon pure vanilla extract
  6. 1/2 cup peanut butter, crunchy or creamy
  7. 2 1/2 to 3 cups old fashioned rolled oats

Instructions

  1. In a medium saucepan, combine the sugar, butter, cocoa, milk, and vanilla. Bring to a slow boil and simmer until the sugar is completely dissolved. Remove from the heat.
  2. Stir in the peanut butter and 2 1/2 cups oats. The mixture should be thick; stir in additional 1/2 cup oats if too runny. Let the mixture stand for about 10 minutes to cool.
  3. Line a baking sheet with wax paper or parchment paper. Drop the mixture by heaping tablespoonful onto the lined sheet. Let the cookies stand at room temperature for 1 hour to firm up. Store in an airtight container.

These cookies are so sickly sweet I can’t eat them. Now that I’m looking around at other recipes, most people use an entire cup of peanut butter and a full cup of oats. I’ve had no-bake cookies many times, and they have *never* been this sweet. Usually I can’t stop myself from eating 3 or 4. With these, I barely made it through one.

We Americans really need to cut back on the sugar. Not even for health reasons, but because we just can’t tell what’s good anymore. First time you have a legit semi-sweet brownie from a German bakery, it’ll change your life.

Just like I remember. These scrumptious foul-named gems are exactly like the ones our school cooks made…back in the days of schools with kitchens! I made these cookies to go along with others to distribute to our neighbors. They are sure to please and so easy!

Need to read reviews before trying recipe, it really helped me. I cut back sugar. Watched out for a non humid day and. Made two batches. One with peanut butter and the other batch with out peanut butter. In the first one I followed recipe with the exception of using only a cup and 1/4 sugar and quick cooking oats. The second batch. I added a bag of shredded coconut and some orange zest. I also used the cup and a 1/4 of sugar and the quick cooking oats. Write out on a piece of paper the exact recipe you plan to follow
Don’t add the vanilla until the mixture is done boiling or it will essentially boil the taste away

Loved these ! I used 3 cups of oats and like a table spoon extra of peanut butter. I also softened my butter in the microwave first and I use half a cup sugar less than the recipe calls for because I’m a fan of keeping all my teeth.
