Oatmeal-Chocolate Snack Cakes

These delightful treats have a soft, tender crumb that harks back to old-fashioned snack cakes from the grocery store. For little kids: Let them dump the ingredients into the mixing bowls, whisk together the dry ingredients and stir in the chocolate chips. For big kids: Let them measure out the ingredients, spray the baking pan with cooking spray and help spread the batter in the baking pan.

Ingredients

  1. Cooking spray
  2. 1 cup whole-wheat pastry flour
  3. 3/4 cup rolled oats
  4. 1/2 teaspoon baking soda
  5. 1/4 teaspoon kosher salt
  6. 6 tablespoons unsalted butter, melted and slightly cooled
  7. 1 large egg
  8. 3/4 cup packed light brown sugar*  (See Cook’s Note)
  9. 1/2 cup unsweetened applesauce
  10. 3/4 cup semisweet mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Line the bottom of a 9-inch square baking pan with a foil strip long enough to overhang on 2 opposite sides. Spray the foil lightly with cooking spray; set aside.
  2. Whisk together the flour, oats, baking soda and salt in a medium bowl; set aside. Whisk the butter, egg, brown sugar and applesauce in a large bowl until combined. Add the dry ingredients to the wet and mix until barely mixed. Stir in the chocolate chips.
  3. Spread the batter in the prepared baking pan. Bake until the cake is light brown around the edges and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Remove from the oven and let cool on a rack for 15 minutes. Use the foil overhang to lift the cake out of the pan and let cool completely on the rack. Invert onto a plate and peel the foil off. Re-invert the cake onto a cutting board, cut into 12 pieces and serve.

Very delicious! Kids loved it and very easy to make. I added vanilla and sprinkled with coarse sea salt before baking. It’s definitely a cake-like texture, is originally expected more of a dense bar. Snack “cake” is a good description. Not super healthy but better than some recipes. The whole grains and apple sauce are a plus!

So I wasn’t sure about these from looking at the recipe. I wasn’t sure how they would turn out but decided to try them because they looked simple. They were simple! While I was making them I was still a little unsure, I wanted to add vanilla or cinnamon or something as there was not anything added to give them flavor but I decided to stick to the recipe. I doubled the batch and recommend you do to or you wont have much, Also I added the chocolate chips by how they looked in the batter as this recipe calls for alot, i used almost that amount for a double batch and there is plenty in there. Anyways I used white flour as that is what I had and I used brown sugar stevia as a sugar replacement… I literally just pulled them out of the oven and they are freakin delicious. make these. simple, great afterschool snack or to pack in their lunch. yum! I will be saving this recipe.

These oatmeal chocolate snack cakes are fantastic.  The applesauce makes them super moist and reduces the fat content.  Although some may think it has a lot of sugar.. compared to many other kids snacks these are reasonable and it is nice to know what all the ingredients are (as opposed to pre-packaged snack bars/cakes).   And best of all.. my kiddos love them!
