Grandma Lu’s Cassata Cake

Ingredients

  1. 2 sponge cakes (store-bought or homemade)
  2. 16 oz. fresh ricotta cheese
  3. 2 pints of heavy cream, whipped
  4. 2-3 tablespoons sugar
  5. 1 tablespoon vanilla
  6. 2 chocolate bars
  7. Maraschino cherries (drained)

Instructions

  1. Mix ricotta, 1 pint of whipped heavy cream, sugar, and vanilla in a bowl till smooth. Add one roughly chopped chocolate bar. Fold in.
  2. Spray a large bowl with nonstick cooking spray (like Pam). Slice sponge cake into half-inch pieces. Line the bowl with one layer of cake. Follow with a layer of filling, making sure to come up to top of bowl. Continue alternating layers of cake and filling till you have reached the top of bowl. Finish with a layer of cake. Seal with plastic wrap and refrigerate overnight.
  3. Remove plastic wrap. Place a pretty cake dish on top of bowl. Invert the cake and remove bowl. Frost with remaining pint of whipped heavy cream. Decorate with 2nd chocolate bar curls and drained maraschino cherries.

The recipe calls for two sponge cakes and I used two 9″ rounds but it was not enough, really needs four 9″ rounds. I proceeded to refrigerate overnight just to taste it. The “filling” wasn’t bad, just not great. I had four others taste test and they said the same thing. I think one could use pound cake if sponge cake isn’t available at your bakery.

This was fast, easy, and an instant hit at a bridal shower. I substituted Cool Whip for the whipping cream due to technical difficulties with our ancient mixer and it still tasted marvelous! I definitely recommend this recipe!

This was a hit at Christmas-I couldn’t find sponge cake and didn’t feel like making it so I lined the bowl with lady fingers instead-came out great-will make again-it was quick and easy
