Flourless Chocolate Cake

Ingredients

  1. Cooking spray
  2. 1 1/2 pounds bittersweet chocolate, chopped
  3. 1 1/2 pounds butter, cut into small pieces
  4. 1/2 cup water
  5. Splash vanilla extract
  6. 1 1/2 cups granulated sugar, plus 1/2 cup
  7. 12 eggs, separated

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Spray a 9-inch springform pan with cooking spray. Line the bottom of the pan with a circle of parchment paper.
  3. Set up a double boiler on the stove over low heat and heat until the water is barely simmering. Place the chocolate and butter in the double boiler and melt, stirring occasionally. Once the chocolate and butter are melted, remove from the heat and stir in the water, vanilla and 1 1/2 cups of the granulated sugar. Whisk in the egg yolks.
  4. In a separate bowl beat the egg whites with an electric mixer until frothy. Add remaining 1/2 cup of the granulated sugar and beat until soft peaks form. With a rubber spatula, gently fold the egg whites into the chocolate mixture. Bake for 45 minutes. Serve.

I think there’s a typo in this recipe. I’m almost positive it should read 1 1/2 STICKS of butter – NOT 1 1/2 POUNDS (which would be 10 sticks of butter . . . way to much!).

This recipe was AWFUL! It yielded too much batter….took much longer than 45 minutes to bake, I took it out after 80 minutes and it still wasn’t cooked through!! It should taste rich and sweet but instead tasted bland and not sweet. What a waste of a pound and half of butter, a pound and a half of chocolate, a dozen eggs, and my time!!

It ended up disgusting. Way to much butter and eggs, is 1 1/2 lbs correct? I cooked it longer then it said and it still literally oozed out all over when i took it out of the pan. butter had literally settled on the bottom in a thick layer and it never actually cooked through. Horrible.

This cake needs to be cooked longer than 45 minutes. It has way too much butter and was very soggy. A waste of a lot of butter and eggs!
