Ingredients

  1. 1/2 cup olive oil
  2. 3 tablespoons whole cumin seeds
  3. 1 tablespoon crushed red pepper
  4. 1 teaspoon whole fennel seeds
  5. 3 pounds carrots, chopped
  6. 4 medium zucchini, chopped
  7. 3 large onions, chopped
  8. 1 large bunch broccoli (or 2 smaller ones), chopped
  9. 1 bunch celery, chopped
  10. 1 gallon chopped tomatoes packed in juice
  11. 3/4 cup chili powder
  12. 1/2 cup all-purpose seasoning, such as Spike
  13. 1/2 cup onion powder
  14. 1/3 cup dried basil
  15. 1/3 cup garlic powder
  16. 1/3 cup dried oregano
  17. 2 teaspoons ground black pepper
  18. 4 cups textured vegetable protein, soaked in hot water to reconstitute, then rinsed and drained
  19. 6 cups canned kidney beans, rinsed and drained

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the cumin seeds, crushed red pepper and fennel seeds and cook until very aromatic, 3 to 4 minutes. Add the carrots, zucchini, onions, broccoli and celery and saute until the veggies are tender, about 10 minutes. Add the tomatoes, 8 cups water, chili powder, all-purpose seasoning, onion powder, basil, garlic powder, oregano and black pepper and stir to combine. Stir in the textured vegetable protein, then the beans. Simmer for 10 to 15 minutes. Taste and adjust seasoning if need. Serve hot.

I agree – delicious spices! There’s a kick, but family members who want less kick added a bit of cheese and sour cream. Great recipe to have on hand.

I think sonny would eat anything with gusto and quite spirited, this not good.

I have rated this 3 stars as the heat from the seasonings was more than we could tolerate, really hot.. Other than this problem, it was excellent. I have eliminated the red pepper flakes and black pepper from my copy of the recipe and will make again. Hopefully, this will correct the high heat problem and the remaining seasonings will be just enough heat for my family. You cannot tell that it is meatless.

Great chili taste. Meaty texture. My husband knew it did not have meat in it because I was eating it. Non veg friends would be happy eating it.
