Ingredients

  1. 2 teaspoons olive oil
  2. 1 pound ground pork
  3. 1 pound ground bison
  4. 1 pound ground beef chuck
  5. 3 cloves garlic, minced
  6. 2 red bell peppers, chopped
  7. 1 jalapeno, seeds removed, chopped
  8. 1 large white onion, chopped
  9. 1 tablespoon chili powder
  10. 1 tablespoon cumin
  11. 2 teaspoons chopped chipotle chiles in adobo sauce
  12. 1 teaspoon cayenne pepper
  13. Kosher salt and ground black pepper
  14. One 28-ounce can tomato puree
  15. One 28-ounce can crushed tomatoes
  16. 1 cup lager-style beer
  17. Two 16-ounce cans red kidney beans, drained and rinsed

Instructions

  1. Heat the olive oil in a large Dutch oven over high heat and add the ground pork, ground bison and ground chuck; using the back of a wooden spoon, break up the meat into small pieces and cook until well browned, 10 to 12 minutes.
  2. Add the garlic, bell peppers, jalapeno, onion, chili powder, cumin, chipotle, cayenne, 1 teaspoon salt and 1 teaspoon pepper, and cook, stirring occasionally, until the vegetables soften, 6 to 8 minutes.
  3. Stir in the tomato puree, crushed tomatoes and beer, bring to a boil, then reduce the heat and simmer for 1 hour, stirring occasionally. Stir in the kidney beans and cook for 10 more minutes. Serve hot.

My first impression was that this chili was just ok. I agree with the reviewer that said it tasted too tomatoe-y. I like chilis that tastes more tomatoe-y, but this was a bit much. But I will say after a day in the fridge, it tasted a lot better. Much more like chili. I ate it all week. It was very good.

Tastes more like tomato soup. Chili typically has a lot more chili (chili powder, paprika, etc…) in it. Anyway… glad other people liked it.

Flavorful and tasty without being too spicy. The blend of meat gives it a rustic and homey feel. So easy to make and gets better the longer cooks!

I love Nancy and the show but I thought this was about as mediocre a chili as it gets. And, if you think about it, how could it not be? Other than S&P, it has 2 spices in it.

This is a really good basic chili.   Fixed according to recipe, only changes being a little more chili powder and a little more adobo sauce. It was meaty, spicy, and tasty.
