Skinny Chicken Casserole

Ingredients

  1. cooking spray
  2. 1 cup light mayonnaise
  3. 1 teaspoon dried minced garlic
  4. 1 teaspoon dried minced onion
  5. salt and ground black pepper to taste
  6. 1 ½ cups shredded Parmesan cheese, divided
  7. 2 ½ cups whole wheat rigatoni
  8. 1 pound skinless, boneless chicken breasts, cubed into bite-sized pieces
  9. ½ cup Italian-seasoned panko bread crumbs

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Coat a medium-sized casserole dish with cooking spray.
  2. Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes. Drain and set aside.
  3. Mix mayonnaise, garlic, onion, salt, and pepper together in a medium-sized bowl. Add 1 1/4 cup Parmesan cheese; mix well. Mix in cooked pasta and chicken, making sure everything is evenly coated.
  4. Transfer mixture to the prepared casserole dish. Sprinkle with remaining 1/4 cup Parmesan cheese and panko bread crumbs. Cover with aluminum foil.
  5. Bake in the preheated oven for 30 minutes. Remove from the oven, uncover, and replace in the oven. Bake until chicken is no longer pink in the center and juices run clear, about 10 minutes more. Let stand for 1 to 2 minutes before dishing out.

My daughter found it a bit sweet but my son-in-law liked it. I think if I tried it again I would go lighter on the mayo and and fresh garlic and fresh onion both sautéed and maybe so broccoli

It was pretty good but I did add extra garlic powder and half a can of cream of chicken soup to it.

My husband and I enjoyed this dinner. I made no changes but I think next time I would add mushrooms to it and maybe even broccoli. Will definitely make it again.

Having read the reviews for this dish, I made a few additions to enhance the flavor. Instead of 1 teaspoon each of minced onion and garlic, I added 2 of each. Also, I tossed the pasta in a 1/2 cup Kraft Zesty Italian Fat free dressing before mixing it in the Miracle Whip mixture with the chicken. Then poured it into a medium casserole dish. My family loved it. Had a ton of flavor and didn’t add that many more calories.

Nice simple dinner. I didn’t have the low calorie mayo so it was just more calories that noted. The only thing I added was garlic bread. There was no left overs so it was a big hit!

This was a easy, quick and very tasty dinner. I made it as presented with the exception being that while I was bringing my water to a boil and then cooking my pasta I poached a large chicken breast in chicken stock, by the time I mixed all my other ingredients together my chicken was done so I chopped it up and added it to the rest. I covered the dish in foil, baked at 375 for 15 minutes, removed the foil and baked and addition 5 or 10 minutes. Oh, I also used Hellman’s regular, not the lite which gets runny with heat. I’ll make this one again.

12.28.20 This certainly was one of the easiest casseroles I’ve ever made. I followed the recipe to the letter with the exception of using penne (what I had on hand) instead of rigatoni. But the flavor was a little weak, the casserole was a bit dry, and some of the pasta on the top was hard, a result of overcooking I think. I know the chicken needs to be cooked, and maybe timing depends on the size of the chicken cubes, but I will try cutting back the cooking time in the future. For our tastes, I would increase both the dried minced onion and dried minced garlic, maybe give it a little sprinkle of red pepper flakes, as well as just a splash of cream or milk. But this is a good casserole that needs just a little tweaking. This is a wonderful quick-and-easy weeknight dinner option, and I plan to try it again.
