Servings: 4
Yield: 4 chicken breasts

Ingredients

  1. nonstick cooking spray
  2. 1 tablespoon butter, softened
  3. 1 tablespoon lemon juice
  4. ½ teaspoon dried Italian seasoning
  5. ⅛ teaspoon garlic powder
  6. ⅛ teaspoon cayenne pepper

Instructions

  1. Set an oven rack 4 to 6 inches from the heat source and preheat the oven’s broiler. Spray a broiler pan with cooking spray.

A simple and quick way to prepare chicken breasts. I think it’s important to always pound out the chicken to an even thickness to prevent over-cooking the thinner end and/or under-cooking the thick end. I pounded mine down to about a 1 1/4″ thickness. I suggest you double the butter mixture as there was barely enough to coat 2 breasts, nevermind 4. My chicken was done after 10 minutes, so start checking earlier than 12 minutes.
