Ingredients
- 1 (8 ounce) package dried soba noodles
- 3 tablespoons soy sauce
- 3 tablespoons brown sugar
- 1 pound boneless, skinless chicken breasts, cubed
- 2 tablespoons sesame seeds
- ½ cup olive oil
- 3 tablespoons rice vinegar
- 1 tablespoon finely grated ginger
- 1 (7 ounce) package mixed salad greens
Instructions
- Fill a large pot with lightly salted water and bring to a rolling boil. Ease soba noodles into the water and return to a boil. Cook, uncovered and stirring occasionally, until noodles are tender yet firm to the bite, 5 to 7 minutes. Drain and rinse under cold water.
- Heat soy sauce and brown sugar in a large skillet over medium heat. Add chicken; cook and stir until no longer pink in the center and the juices run clear, 5 to 7 minutes. Transfer to a bowl; sprinkle with sesame seeds and toss to coat.
- Whisk olive oil, vinegar, and ginger together in a bowl until combined. Divide greens among four plates; top with soba noodles and chicken. Serve with vinaigrette.

Tasty and easy, did add sesame oil.
Ran out of fresh ginger, used dried… still delicious. Wasn’t sure whether dressing was for greens or noodles, so I dressed the greens and left the noodles plain.
