This dish is a twist on the classic chicken piquant, a fiery Cajun dish. This is simple to put together and tastes delicious over white rice.

Ingredients

  1. ½ cup all-purpose flour
  2. ½ teaspoon Creole seasoning (such as Tony Chachere’s)
  3. 1 (16 ounce) package boneless, skinless chicken breast tenders
  4. 1 tablespoon olive oil
  5. 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL)
  6. ¼ cup diced sweet pickles
  7. 2 tablespoons red wine vinegar
  8. 2 tablespoons drained capers
  9. 2 garlic cloves, crushed

Instructions

  1. Mix flour and Creole seasoning together in a shallow bowl. Dredge chicken through flour mixture, shaking of excess.
  2. Heat oil in a skillet over medium-heat. Cook chicken in hot oil until browned, about 2 minutes per side. Add diced tomatoes with green chile peppers, pickles, vinegar, capers, and garlic; simmer until chicken is no longer pink in the center, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  3. If you have concerns that this may be too spicy, there is a mild version of Rotel diced tomatoes and green chiles available.

I didn’t have capers, I used sweet pickle relish instead of dicing sweet pickes, and I added some salt. Quick & easy dinner! Super easy and everyone liked the ‘sauce’. The chicken was tender but I don’t think the cajun seasoning was noticeable. Really good though and we’ll make again.

Delicious and nice and spicy. I made a mistake and put 1 Tbls chili powder in before I realized it wasn’t paprika. So I just continued with 2 Tbls paprika. The recipe for the creole seasoning came from this sight. I love it and it makes a bunch!

This turned out great! I used more chicken than the recipe states so I added an extra can of Rotel tomatoes. They do have one now with habanero peppers which makes the receipe very spicy! Will definitely be making this again.

I made a low carb version of this recipe. I used no sugar added sweet pickles, minced the garlic. For the breading I used carbalose flour and increased the creole seasoning slightly. Instead of chicken tenders, I used boneless, skinless chicken breasts cut into strips lengthwise and flattened slightly. I also had to use more olive oil. My husband really liked this dish. His was served over a brown rice mixture.
