Ingredients
- 1 ½ cups coconut milk
- 1 tablespoon minced ginger
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 1 teaspoon oyster sauce
- 2 teaspoons minced garlic
- ½ teaspoon chile-garlic sauce (such as Sriracha®)
- 2 tablespoons white sugar or sugar substitute
- 1 tablespoon avocado oil
- 1 pound chicken breast, cut into bite-sized pieces
- ½ onion, sliced
- 1 ½ teaspoons curry powder
- 2 cups broccoli florets
Instructions
- Mix coconut milk, ginger, lime juice, fish sauce, oyster sauce, garlic, chile-garlic sauce, and sugar together in a small bowl.
- Heat avocado oil in a large skillet or wok over medium-high heat. Stir-fry chicken in the hot oil until no longer pink, 8 to 10 minutes. Remove from wok and keep warm. Leave remaining avocado oil in skillet.
- Stir onion and curry powder into hot oil in skillet; cook 2 minutes. Stir in broccoli; stir-fry 3 minutes. Add coconut milk mixture and bring to a boil. Reduce heat to medium and simmer sauce and vegetables for 3 minutes. Return chicken to skillet; cover and cook until chicken has heated through and vegetables are tender, about 3 minutes.
- Use olive oil in place of avocado oil; use sugar substitute if you don’t eat sugar.

Turned out amazing, used some Za’atar to spice up the spice blend but followed recipe other wise
Very good. There was quite a lot of sauce, so I increased the broccoli to 4 cups (including pieces of peeled stem). I also added cornstarch to thicken the sauce. I didn’t have oyster sauce, so I left it out. It could use a but more salt, but that might be down to the lack of oyster sauce.
Delicious! I also omitted the oyster sauce. Added some cashews and rice. Will definitely make again.
Delicious! The only modifications I made was to omit the oyster sauce because I didn’t have any, seasoned the chicken with garlic powder, salt and pepper before cooking, doubled the curry because I simply love curry and used a bag of frozen stir fry veggies and a can of bamboo shoots instead of the broccoli. It was a bit runnier than I am used to, but all that flavor soaked into the rice over which it was served. So good! Will definitely make this again and again. Thanks for sharing.
I have made this a few times and have loved it every time. I have used both chicken breasts and thighs, and both broccoli and green beans. A couple of changes on the last time made it even better as I added red bell pepper and I salted the chicken just a little as it was cooking. Thanks for sharing this recipe!

So delicious and husband even loved it! I added book Choy and pineapple and instead of oyster sauce just added more fish sauce. Instead of cane sugar I used coconut sugar – so yum!
Delicious and easy! This is a very versatile recipe, I used tofu instead of chicken and baby bok choy and red pepper for veggies.
Whole family loved it. Used honey instead of sugar and olive oil instead of avocado oil. Also used extra garlic based on other reviews. Will make this many times.
This is one of the first recipes I tried on the Paleo Diet. My husband has a lot of food allergies so we are basically following the Paleo diet. We both loved this!
I’m curious what made you believe this was Paleo at all. Besides that… this is a good recipe… a little to sweat from me so I didn’t include the sugar at all – but the coconut milk with the curry makes the dish.

I added two bags of frozen stir fry vegetables, mushrooms, a splash of low sodium soy sauce and some garlic spice. So good!
We enjoyed this and served it over cauliRice. My only issue was not sufficient curry. Next time, and there will be a next time, I will add lots more curry and also some mushrooms.
I made it using shrimp and it turned out delicious. Added some carrots and yellow peppers which added a nice flavor. Served over a bed of rice. My family devoured it! Not a morsel was left!

OMG definitely a keeper! Used chicken thighs instead, didn’t have oyster sauce. Delish anyway.
I used shrimp instead of chicken and left out the oyster sauce. I also used a smaller frying pan and boiled the shrimp in the curry sauce instead of sauteing it beforehand. It had great flavor and went well served over rice. Next time I’d like the sauce to be a little thicker so I’ll add some cornstarch. Can’t wait to try it again!
