Maple Glazed Chicken with Sweet Potatoes

When I was a young girl, my mother created these. Of course, we would love to eat them after helping her. Sprinkle with cinnamon, sugar (granulated or powdered), or both. Delicious!

Ingredients

  1. 1 ½ pounds sweet potatoes, peeled and cut into 1-inch pieces
  2. 1 pound chicken tenders
  3. 2 teaspoons steak seasoning (such as Montreal Steak Seasoning®)
  4. 2 tablespoons vegetable oil
  5. ½ cup maple syrup
  6. ½ cup sliced green onions

Instructions

  1. Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes, and set aside.
  2. Sprinkle chicken tenders with steak seasoning; heat the oil in a large skillet over medium heat, and cook the chicken tenders until the meat is lightly browned and no longer pink inside, 5 to 8 minutes per side. Remove the chicken, and set aside. Stir the maple syrup into the skillet, scraping up and dissolving any browned flavor bits from the skillet. Bring to a boil, simmer for 2 minutes, and stir in the green onions.
  3. To serve, place the mashed sweet potatoes onto a serving platter, top with the chicken tenders, and pour the maple sauce over the chicken.

I used red onion and burger seasoning because that’s what I had on hand. I added a little butter to the sweet potatoes and threw some bacon into the syrup as I simmered the onions. The smell in the kitchen is lovely! The meal was great and so easy! Thank you!

This was SO GOOD! I made it quite a bit differently though, but I think I got a pretty similar result. I oven roasted the potatoes (flesh side down on parchment paper, 400° for 50 minutes.) I sauteed chicken breast after seasoning with salt, pepper, steak seasoning, and a dash of chili powder. Once I removed the chicken breast from the pan, I directly put a bunch of shoelace cut red onion on the pan until it was completely sauteed and soaked up all that yummy chicken seasoning. I added 1/3 cup of SUGAR FREE syrup and constantly stirred for about 1 minute. It started to blacken quickly so I took it right off and put the onions on top of the chicken bowl. I added some peas for a little extra mmph. Starting from the bottom of the bowl it was 1/2 a mashed sweet potato, 4 oz chicken, 1/3 cup of peas, small pile of sweet syrupy red onion. It was SO. STINKING. GOOD!

I used the air fryer for the chicken tenders- cooked from frozen/ rubbed a little avocado oil on them and seasoned with steak seasoning- air fryed on 400 for 15 minutes turning once. Washed, poked and put a sweet potato in the microwave for 6 minutes. Cut up a bunch of green onions; once potato was cooked I put the onions on it, poured some 100% pure maple syrup on it and then topped it with the chicken. Fast healthy and yum!

I was skeptical at first but who doesn’t like a maple I used chicken thighs instead of tenders for the recipe and followed the rest. I prepared the chicken as directed and baked them for 30 mins and fried them for an additional 3-4 mins each side. It was delicious I will be making this again!

The BF liked this quite a bit. I baked the potato instead, so during that time I marinated the cut up boneless, skinless chicken thighs (he likes those better than breasts) in the steak seasoning. Mashed the potato with a bit of butter. After I browned the chicken and removed them from the pan (I was another that used red onion vs the green) I caramelized the red onion…I only had a sugar-free syrup but suppose that’s okay. I did use the chopped green onion on top and that really made for a pretty dish.

This was a pretty yummy meal! I did add butter and brown sugar to the potatoes, just because I like it that way. I added pats of butter on top of the chicken towards the end of the sauteing, and cut the syrup to 1/4 cup. I pan fried some onions and shallots to top it off, that made all the difference! I would definitely recommend this dish, and I will make it again! Thanks

My new favorite dish to make! Super easy too. Even a college student with basic cooking skills can do this. I personally do not measure anything anymore. I use breast tenders which have stayed juicy every time. Don’t cook the chicken too long or it will get a little dry. Sometimes I use peeled sweet potatoes and add butter and a little brown sugar or I use red potatoes with the skin and add butter and a little heavy cream. Salt the water when you boil the potatoes. I like to add a ton of green onions but that’s just me. I also just pour enough maple syrup to make enough sauce. Measuring things in this recipe isn’t a big deal. I also rubbed my chicken with smokehouse maple seasoning from the McCormick grill mates brand. I am so happy I came across this recipe!

Very easy. We didn’t make the sweet potatoes, did brown rice instead. It would be even better with potatoes to soak up the glaze more.

I used chicken breasts butterflied and cut into strips. I also left out the onion and added chopped (cooked) bacon. Then I layered it into a baking pan and popped it into the oven for 10 minutes. So yummy!
