Lemon Garlic Chicken

This lemon-garlic chicken I threw together was fantastic.

Ingredients

  1. 2 tablespoons butter
  2. 3 skinless, boneless chicken breast halves
  3. 1 ½ teaspoons salt
  4. 1 ½ teaspoons ground black pepper
  5. 2 tablespoons garlic powder, divided
  6. 1 lemon, juiced

Instructions

  1. Melt butter in a skillet over medium-high heat.
  2. Season chicken with salt and pepper; place in melted butter. Cook chicken, flipping frequently, until browned, about 5 minutes. Sprinkle 1 tablespoon garlic powder over chicken; cook for 2 minutes. Flip and sprinkle remaining 1 tablespoon garlic powder on the second side; cook for 2 minutes.
  3. Pour lemon juice over each side of chicken and cook until no longer pink in the center, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

It was quite good. I added minced garlic instead of garlic powder. When I took the chicken out, I added 2 Tbs of flour to the leftover butter in the pan. Cooked it and then added about 1 c of chicken stock to make a gravy. Poured the gravy over the chicken and some mashed potatoes. Served with broccoli.

“Chicken breast halves” is too vague. My pound of chicken breast, that I cut in half, reached a steady state of 90 degrees on medium high heat and never went higher. I had to oven roast it for another 25 minutes at 400 to barely get it to 165 degrees. The chicken was a bit burned on the outside from sitting the suggested time on the skillet, so whatever interesting flavors were supposed to be there didn’t survive browning.

This was good due a quick meal using chicken. I did add some fresh parsley, rosemary and minced garlic when I added the garlic powder. To me this gave the dish a little more flavor while still being super easy to make!

I was looking for a lemony chicken recipe that wasn’t piccata when I found this one. I decided to cook this based on all the good reviews plus I like lemon and garlic. The lemon and garlic flavors are quite strong, too strong for my family. The whole house smells like garlic powder and lemon. I washed the leftover chicken off after dinner to try to salvage the remaining chicken.
