Ingredients
- 2 bone-in, skin-on chicken breasts (about 2 pounds total)
- 1 tablespoon Cajun seasoning, or more to taste
- salt and freshly ground black pepper to taste
- 1 cup chicken broth
Instructions
- Sprinkle chicken breasts with Cajun seasoning, salt, and pepper.
- Place a trivet in a multi-functional pressure cooker (such as Instant Pot®). Pour in chicken broth and add chicken breasts. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer’s instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid.
- Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
- Place cooked chicken breasts on a baking sheet and broil until skin is nicely browned, about 4 minutes.
- Any spice blend you like may be used in place of the Cajun seasoning.
- You do not need to use a trivet; you may place the chicken directly into the broth.
- I made 3 chicken breasts and still used 1 cup of broth, and I increased the cooking time to 12 minutes.
