Ingredients
- 1 cup crushed buttery round cracker crumbs
- 2 large eggs, beaten
- ½ teaspoon garlic salt
- ground black pepper to taste
- 4 skinless, boneless chicken breast halves
- ½ cup butter, cut into pieces
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Place cracker crumbs and eggs into 2 separate shallow bowls. Mix cracker crumbs with garlic salt and pepper.

- Dip chicken in eggs, then dredge in crumb mixture to coat. Arrange coated chicken in a 9×13-inch baking dish. Scatter butter around chicken.

- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Love this – simple and flavorful. I use Panko instead of cracker crumbs. To the Panko I add about 1/4 c flour, salt, pepper, 1 tsp dry thyme, garlic and onion powder. I serve with a lemon garlic butter sauce. Delightful!

It was really easy and really tasty. They stayed juicy but beware do not over cook the timing was spot on. I took the advice of some others and added a bit of salt, pepper, and oregano to the mayo mixture and I also used garlic and herb bread crumbs which made the flavor amazing:) Im saving the left overs to cut up and put on top of our salads for lunch tomorrow. Next time I will add spaghetti sauce and mozzarella cheese on top to make it into chicken parm!! Yummy!!

Sounds very tasty and simple to make for a quick meal, I’ll try it tonight for me and wife, but me being me I’ll naturally add more herbs/spices to mine. Has anyone tried it with Olive Oil since my wife is allergic it to butter???
I made this but I added fresh lemon juice from 2 lemons. Baked as directed. Garnished with chopped parsley and thinly sliced lemon. So good.
Very much enjoyed this recipe. However I did add some additional seasoning. Old Bay added the cracker coating gave this dish a little pop of flavor.

I tried this tonight, it was very good! My chicken breasts were pretty thick, so I baked it 45-50 minutes, basting it twice and flipped it about 30 mins in. I did what another reviewer did: coated with eg, placed the chicken on a plate and seasoned it, then dropped it in the cracker crumbs. My husband made some rosemary salt, so I used that and pepper. Tossed on a little garlic salt and then the cracker crumbs. Next time I will put under broiler to crisp up the top. I served it atop a big salad. but it would be wonderful with scalloped potatoes and a green veggie…..comfort food!
I made it in my airfryer. Put some foil in the basket and baked it for 20 mins. Was delish will make it again

I think I’d rather have the seasoning on my CHICKEN, and not in the crumbs ….. tyvm that way I can put it where I want it, thereby lessening what I toss out when I toss any remaining crumbs. your welcome 😉
I haven’t made this recipe, but I make one similar. I melt butter in my pampered chef stoneware while I season my chicken, just sprinkle salt pepper, onion and garlic powder on both sides of chicken (I use boneless skinless thighs) crush the garlic flavored ritz crackers and press onto the chicken, lay a thin slice pat of butter on top and bake in 400 degree oven. Timing varies from 20 to 45 minutes depending on size of thighs and how many I bake. Toasty golden brown yummy chicken. My husband loves this. I do use real butter.
My crumb coating did not brown. I will brown prior to oven.
