Easy Pineapple Chicken

Weeknight meal is made simple with pineapple chicken. This simple stir-fry is as tasty as it is eye-catching! Serve with fried rice for a treat or with rice to make a complete meal. If you want something sweet and spicy, add red chili flakes to the mixture.

Ingredients

  1. 3 tablespoons soy sauce
  2. 3 tablespoons olive oil, divided
  3. ½ teaspoon paprika
  4. salt to taste
  5. 1 pound boneless, skinless chicken breast, cut into strips
  6. 1 red bell pepper, cubed
  7. 1 bunch scallions, trimmed and sliced into 1/2-inch lengths
  8. 1 (12 ounce) can pineapple chunks, drained and juice reserved
  9. 1 tablespoon cornstarch

Instructions

  1. Gather all ingredients.

  3. Combine soy sauce, 2 tablespoons olive oil, paprika, and salt in a bowl. Add chicken strips and let marinate while preparing the remaining ingredients.

  5. Heat remaining 1 tablespoon olive oil in a wok over medium-high heat. Add bell pepper and stir-fry for 3 minutes.

  7. Add scallions and cook for 2 more minutes.

  9. Remove chicken from marinade and add to the wok; discard marinade. Cook, stirring occasionally, until chicken is cooked through and no longer pink in the center, 10 to 15 minutes.

  11. Combine pineapple juice and cornstarch in a bowl; mix together. Add pineapple chunks to the skillet and cook for 2 to 3 minutes.

  13. Pour in pineapple juice mixture and bring to a boil. Simmer until sauce has thickened, about 3 minutes.

Tasty, almost made as written. I used low sodium soy sauce and omitted the salt. Didn’t have green onions so I used a white one. Super easy. Served over rice.

Added a bit of garlic and ginger as others suggested. Tasted delicious, but a bit short of sauce. Maybe increase the soy sauce and olive oil a bit next time. Because there WILL be a next time!

A bit bland but easy to make. I guess I was expecting more of a sweet and sour experience. I made it again with green and red peppers pineapple concentrate ginger and garlic and onion powders since that is all I had on hand. A bit better for my palate but easy-yes. Times on cooking accurate veges still had crispness

Recipe looks like a slant to Sweet & Sour, but also appears to be really plain, and sure enough that is what I see in the comments. If this is supposed to be Chinese, where’s the ginger? Where’s the Chinese 5 spice? Definitely needs a bit more in the flavor department.

I used precooked chicken and it still turned out great. I still let it soak in while prepping the rest. Curious to see the difference when starting out with raw chicken. I didn’t have green onions but used some leftover chopped onion. Very easy. This will be in the rotation.

I love how simple and easy the recipe is; but it was a little bland to me. It was super easy to modify it to my tastes though – I added some garlic, ginger, pepper, and brown sugar! Then ate the chicken with white rice! Loved it.
