Easy Oven-Fried Chicken Legs

Ingredients

  1. 1 ½ cups buttermilk
  2. 1 teaspoon salt
  3. ½ teaspoon black pepper
  4. 6 chicken legs
  5. ¾ cup cornstarch
  6. ¾ cup panko bread crumbs
  7. 1 teaspoon smoked paprika
  8. 1 teaspoon Greek seasoning
  9. 1 teaspoon onion powder
  10. ½ teaspoon poultry seasoning
  11. ½ teaspoon salt
  12. ¼ teaspoon ground black pepper
  13. ⅓ cup butter, melted, divided

Instructions

  1. Combine buttermilk, salt, and pepper in a large bowl. Add chicken pieces and marinate at room temperature for 30 minutes.
  2. Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking pan with foil and place in the oven.
  3. Combine cornstarch, panko, smoked paprika, Greek seasoning, onion powder, poultry seasoning, salt, and pepper in a large resealable bag.
  4. Remove chicken legs from buttermilk, drain, and dip legs one at a time into the dry coating mixture.
  5. Remove pan from the oven with pot holders and add 1 tablespoon melted butter to the pan. With a pastry brush, spread melted butter all over the pan.
  6. Lay coated chicken legs into the pan. Pour half of the melted butter over chicken legs.
  7. Roast in the preheated until chicken is no longer pink at the bone and the juices run clear, about 40 minutes, turning over at the halfway point. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Drizzle with remaining melted butter and serve immediately.

Excellent flavor. Used an air fryer.

I did this with 12 chicken drumsticks. There was plenty of coating. Unfortunately, most of the coating ended up sticking to the foil rather than the chicken. Next time I will spray the foil with vegetable spray. I used the exact amount of spices listed and I thought it was bland. The butter was drippy. Maybe use vegetable spray here too. It would be easier to apply.

I have never heard of Greek seasoning, so I seasoned a bit different. I added all the other seasonings (sans greek) and chili powder, turmeric and cumin. I didn’t have panko, so used plain bread crumbs. I will be using this recipe again with my modifications, depending on what I have on hand.

The recipe was good. I soaked the chicken thighs and legs in buttermilk for 45 minutes. I mixed up panko breadcrumbs and shake and bake to save time. I also added some garlic powder, cayenne pepper, salt and pepper in the crumbs. Followed the butter instructions and it came out great. I cooked both at the same time. Turned legs halfway. Left thighs alone. Be gentle or the breading will fall off. Delicious and tender. I recommend this recipe. Sorry no photo. We ate it all. Before this rating.
