Ingredients
- 6 skin-on, bone-in chicken thighs
- salt and ground black pepper to taste
- 1 pinch garlic powder, or to taste
Instructions
- Preheat oven to 475 degrees F (245 degrees C). Set a wire rack inside a broiler pan or baking pan.
- Pat chicken thighs dry with paper towels. Lift up skin gently; sprinkle salt, pepper, and garlic powder under the skin. Replace skin. Season skin and underside of the thighs with salt, pepper, and garlic powder.

- Roast in the preheated oven until golden, about 20 minutes. Reduce oven temperature to 400 degrees F (200 degrees C). Continue roasting until juices run clear, about 30 minutes more. Let rest for 5 minutes before serving.

This was perfection. My husband loves roasted chicken and my attempts are kind of hit and miss. The technique is perfect! Really nice and crispy. I thought that 475 was too high, but I was obviously wrong. Any additional seasonings would work if you think it’s bland, but we thought that just salt and pepper was perfect! One note. I drizzled olive oil on the breasts before I salt it. Delicious.
The concept of baking was viable and quite simple. There are a variety of spice rubs one can season the chicken with but the principle of how to bake the chicken does not change.
Cooked exactly to recipe instructions but added a few other seasonings (paprika, onion powder and mesquite) to give a little extra flavor. Turned out great!
rubbed the thighs under the skin and on top of the skin with bacon fat before seasoning … also added a couple dashes of Texas Pete hot sauce on each thigh … sold the augmented recipe for a million dollars !!!
Easy recipe and delicious just added a snall amount of crushed red pepper.
This recipe gives you the most perfectly crispy skin, all around due to raising the chicken off the sheet pan. It’s like air frying without the air fryer! This is a keeper.
Great crispy skin! I brine the chicken in a shrine season with Italian herbs before cooking the chicken thighs. Brining helps get the Italian seasoning flavors into that meat. Make sure you pat dry the skin before you cook them in order to get the skin crispy.

Followed recipe as written. Nice that I had all ingredients on hand in pantry. Quick and easy weeknight supper. Very tasty. I did double the amount of seasoning which was a good thing because I did use up all the seasoning on 6 thighs. Definitely a keeper.

Triple or quadruple the garlic powder and spices. Watch your salt and bake at 400 degrees. Good and juicy
