Chicken Breasts with Chipotle Green Onion Gravy

Schupfnudeln is a type of spaetztle (homemade pasta) that is typical of Baden-Baden and the Baden-Wurttemberg state in southern Germany. Its name comes from the Upper German verb “schuppen,” which means “to shove, push, throw, or chuck.” Traditionally, the noodles are created by rolling out potato dough on a board and cutting it into noodles. They are wonderful, simple to make, and go great with nearly anything, including roast pig, racks of lamb, bacon bits, sauerkraut, and other dishes made with cabbage.

Ingredients

  1. 2 skinless, boneless chicken breast halves
  2. salt and fresh ground pepper to taste
  3. 1 tablespoon olive oil
  4. 2 tablespoons butter
  5. 1 tablespoon all-purpose flour
  6. ¾ cup chicken broth
  7. 2 tablespoons minced green onions
  8. ½ teaspoon chipotle chile powder, or more to taste

Instructions

  1. Place chicken breast halves between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season with salt and pepper to taste.
  2. Heat olive oil in a skillet on high heat until it begins to shimmer, about 1 minute. Reduce heat to medium; cook chicken breasts until browned and no longer pink inside, about 5 minutes per side. Transfer cooked chicken to a warm plate and loosely cover with aluminum foil.
  3. Melt butter in the skillet; stir in flour and cook for about 2 minutes. Stir in chicken broth, scraping up any browned bits from the bottom of the pan; cook and stir until gravy begins to simmer and thicken, 1 to 2 minutes.
  4. Stir in green onions and chipotle chile powder.
  5. Return chicken breasts to the skillet and cook until heated through, 1 to 2 minutes.
  6. May substitute chicken stock for chicken broth. For thinner gravy, add more broth or stock.

Very fast and easy dinner. I chopped up a couple of chicken thighs and browned them because that’s what I had. I used no salt butter because I had chicken bouillon vs broth. Served over noodles and hubs loved it! Made a veg for the side…. Worked out great after a late workday. Will do again.

Made this for dinner last night. Chef John would have given me an F. Totally my fault, I was trying to cook an entire tray of chicken breasts for the week so by the time my second round of breasts finished, my brown bits were pretty charred. I continued but the pan gravy looked nothing like Chef John’s, it was a dark chocolate brown. Surprisingly, it wasn’t horrible but it had a hint of burntness so it wasn’t great either. I couldn’t stand to have that on my record, so I made it again for lunch today. This time chef would have given me an A+. It was delicious and pretty. I’m not sure what spice the person who called this bland used, but chipotle powder is very spicy and flavorful! Those sensitive to spice might want to start with a 1/4 tsp. I will definitely make this again.

I’m not the best cook so I always look for tasty easy to follow recipes. I didn’t have chipotle so I just used mild chili powder but kept everything else the same. It turned out great! I have a gravy hating kid and she ate every bite. Will definitely make this again.

Super fast and easy to make! Great weeknight dinner. We didn’t have any chile powder on hand so we substituted a bit of sauce from a can of Chipotle Peppers in Adobo Sauce and it was delicious. It went great with broccoli and rice.

I’ve made this twice with great success. It has a place in the rotation. My chipotle powder was old, so I used 3 teaspoons, and it was perfect. Next to the 1/2 teaspoon on the recipe, I wrote, “Ha ha ha.” We like a kick. I got fresh chipotle powder today, so will probably drop it back to two teaspoons. I also minced four green onions instead of two tablespoons. It was definitely more than 2 TBS. I’m going to sub this gravy for the just “meh” gravy called for with a chicken meatball recipe. Served with pasta and fresh steamed broccoli.
