Chicken Breasts Pierre

A favorite of my husband’s. He hasn’t grown tired of it yet, although I’ve been making it for more than fifteen years! Serve with tossed green salad, pan sauces, and crusty French bread.

Ingredients

  1. 6 skinless, boneless chicken breast halves
  2. ¼ cup all-purpose flour
  3. ½ teaspoon salt
  4. 1 pinch ground black pepper
  5. 3 tablespoons butter
  6. 1 (14.5 ounce) can stewed tomatoes, with liquid
  7. ½ cup water
  8. 2 tablespoons brown sugar
  9. 2 tablespoons distilled white vinegar
  10. 2 tablespoons Worcestershire sauce
  11. 1 teaspoon salt
  12. 2 teaspoons chili powder
  13. 1 teaspoon mustard powder
  14. ½ teaspoon celery seed
  15. 1 clove garlic, minced
  16. ⅛ teaspoon hot pepper sauce

Instructions

  1. In a shallow dish or bowl, combine flour, 1/2 teaspoon salt and ground black pepper. Coat chicken breasts with flour mixture. Melt butter in a large skillet over medium heat, and brown chicken on all sides. Remove from skillet, and drain on paper towels.
  2. In the same skillet, combine the tomatoes, water, brown sugar, vinegar and Worcestershire sauce. Season with salt, chili powder, mustard, celery seed, garlic and hot pepper sauce. Bring to a boil; reduce heat, and return chicken to skillet. Cover, and simmer for 35 to 40 minutes, or until chicken is tender, no longer pink and juices run clear.

I made this last night and it was a big hit with my guys!! Definitely going into the rotation!! I used diced tomatoes because I didn’t have stewed maybe next time I might try it with stewed but then again maybe not lol just the right amount of sweetness and not too salty!! When cooking the chicken I also sprinkled with onion and garlic powder I also added some Italian seasoning to the flour mixture but not a whole lot it was super good and the chicken was cut with your fork tender! So glad I tried this recipe! Thanks so much for sharing

Added red wine instead of water. Also added balsamic. Halved the sugar and salt. Added mushrooms, onion and celery. Oh and fresh tomatoes because they needed to be used.

I made it because the common comment everyone made about it is FLAVOUR! And it certainly does have a lot of flavour. I followed it precisely except used 4 large chicken breasts instead of 6. I found it had just enough sauce for 4 portions since I love to pour it over the rice. Highly recommend and will make again! Thank you!

I loved this. My husband did too, but he thought it was a little too sweet. Maybe next time I’ll use one instead of two tablespoons of brown sugar. I left out the salt in the sauce and didn’t use celery seed because I didn’t have any. I thickened the sauce a little with cornstarch. Will make it again. Oh, and I used diced tomatoes.

I was not impressed by this recipe. I followed the directions exactly and it came across like a sweet tomato sauce. Normally if I try something and it’s a bit off I will make changes and try it again. But this recipe was uninspiring and I won’t be making it again.

It was delicious!! We’re not salters so used very sparingly and it was great. I also don’t use diced tomatoes due to chemicals but had some home made marinara sauce that I had made with meatballs and used that for the tomatoes. Didn’t matter there weren’t tomatoes chunks in it! It was a perfect fit. I served it over Gnocchi. This sauce is really different and it can be used with so many meats/vegetables. Perfect for the creative cook! Thanks for sharing. I will use it a lot!!

Turned out great. Minor changes only. Used Korean chili paste instead of hot sauce and added some roasted red peppers. Served over rice.

I omitted chili powder and cumin, as husband doesn’t care for. May sneak in some cumin next time. Will also add more tomatoes. I forgot to flour chicken but came out great, love the flavor. Definitely make again

Wanted to add another 2022 review to this amazing sauce. I made according to recipe, but did use chicken tenders instead. It doesn’t matter, it is the sauce that makes this so good. I would recommend that you make it just as intended and then you can mess with it. As in my case, I added green peppers and onions along with the boil to add some crunch to go with the chicken. I placed the chicken and toppings over broccoli/chicken flavored rice, poured some of the sauce over it and it was amazing.

This was really good. My 11 year old gave it 2 thumbs up. The only thing I did different was to use diced chicken thighs. I then served the chicken/sauce over white rice.
