Baked Lemon-Dill Chicken Breasts

Ingredients

  1. 4 (5 ounce) boneless chicken breasts
  2. 4 tablespoons honey
  3. 5 lemons
  4. 4 teaspoons dried dill weed
  5. 1 teaspoon dried oregano
  6. 1 teaspoon dried basil
  7. ½ teaspoon garlic powder
  8. salt and freshly ground black pepper to taste
  9. 4 tablespoons butter

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Set chicken breasts into a shallow casserole dish and brush 1 tablespoon honey onto each breast.
  3. Zest 1 lemon, then cut in half. Slice remaining lemons. Squeeze juice from 1 lemon over the tops of the chicken breasts and sprinkle with lemon zest. Combine dill, oregano, basil, garlic powder, salt, and pepper in a small bowl and sprinkle spices on top of the chicken. Cover chicken breasts with lemon slices and set 1 tablespoon butter on each piece of chicken breast.
  4. Bake until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I tweaked it a little bit since I couldn’t get the lemons to slice well. So I added them as pictured, and put a couple squirts of the bottled lemon juice in it. Perfect.

It was a bit too tangy. I’ll probably try it again and cut the dill and the lemon in half. I may even cut all the herbs in half but may just need to play with the recipe a bit. The picture looked nothing like how mine turned out. The herbs completely covered the chicken but the picture barely shows any. The combination of herbs and lemon were great, just too much of it.
