Oven-Roasted Carolina BBQ Chicken Wings

No one will guess that these wings are made in the oven. The baking powder in the breading helps crisp up the skin, and then they’re drenched in my traditional Carolina BBQ sauce, a mustard-based sauce. The sauce is great on pork too, and you can make it ahead and keep it in the refrigerator for up to 2 weeks.

Ingredients

  1. Nonstick cooking spray, for the baking sheets
  2. 1 cup yellow mustard
  3. 1 cup firmly packed light brown sugar
  4. 1/2 cup granulated sugar
  5. 1/3 cup apple cider vinegar
  6. 1 tablespoon Worcestershire sauce
  7. 2 teaspoons hot sauce
  8. 3 pounds whole chicken wings (about 14 wings)
  9. 1 cup all-purpose flour
  10. 2 teaspoons Miss Brown’s House Seasoning, recipe follows
  11. 1 teaspoon baking powder
  12. 1 teaspoon garlic powder
  13. 1 teaspoon onion powder
  14. 1 teaspoon sweet paprika
  15. 1 teaspoon kosher salt
  16. 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 425 degrees F. Line two rimmed baking sheets with aluminum foil and place a wire rack on top of each. Coat the racks with nonstick cooking spray.
  2. Make the Carolina BBQ sauce: Whisk together the mustard, brown sugar, granulated sugar, vinegar, Worcestershire sauce and hot sauce in a medium saucepan over medium heat. Simmer, stirring frequently, until the sauce thickens and the sugars dissolve, about 10 minutes. Set aside half of the sauce for the final basting and for serving.
  3. Make the oven-roasted chicken wings: Pat the chicken wings dry with paper towels. Stir together the flour, House Seasoning and baking powder in a bowl. Dredge the chicken wings in the flour mixture and arrange on the wire racks in a single layer. Bake for 30 minutes. Turn, then baste with the Carolina BBQ sauce and bake until the chicken wings are browned and crispy and a thermometer registers 165 degrees F, 15 to 20 minutes longer.
  4. Brush the roasted chicken wings with the reserved sauce before serving.
  5. Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

These are really good wings with a very tasty sauce. I would make the sauce again for chicken or ribs. The wings came out a little too wet for my liking with the skin a little rubbery. Next time I think I will try to leave them in the oven at the end by turning the heat off and letting them dry out a little and then add more sauce when serving.

I made this for the Souper Bowl and they were finger licking good. Tasty and the sauce was delicious, sweet and tangy. The meat came off the bone like wings should be. Thank you Kardea for sharing your recipe. Will now have to make it again for my kids.

Great recipe but one step is left out from the video. She bastes both sides after 30 minutes. Bakes the 15 minutes and sprays some oil on them and bakes them another 10 minutes.

Decided to try this recipe basically because I had never made a Carolina BBQ sauce before. I was very pleased with this recipe. My wife and niece just loved them. I did make a couple of modifications to
lower the amount of sodium. Instead of the teaspoon of salt, I used just 1/4 teaspoon. I also used the low sodium worcestershire sauce. I will be making this recipe again.
