Lemon-Lime Cola Chicken Wings

These wings are simply grilled, then finished in a sauce made from cola enhanced with the flavors of lime, cilantro and jalapeno. We liked this sweet and tangy sauce on grilled chicken wings, but it would be equally delicious as a finishing sauce for chicken parts or boneless pork loin chops.

Ingredients

  1. 1 12-ounce can cola (1 1/2 cups)
  2. 2 cups packed fresh cilantro
  3. 3 scallions, coarsely chopped
  4. 1 jalapeño pepper, stemmed, seeded and coarsely chopped
  5. Grated zest and juice of 1 lemon, plus wedges for serving
  6. Grated zest and juice of 1 lime, plus wedges for serving
  7. 2 cloves garlic, crushed and peeled
  8. 3 tablespoons vegetable oil, plus more for the grill
  9. Kosher salt and freshly ground pepper
  10. 3 pounds split chicken wings

Instructions

  1. Preheat a grill to medium. Pour the cola into a small saucepan and bring to a boil over high heat; cook until reduced to about 1/4 cup, 12 to 15 minutes. Let cool, about 5 minutes.
  2. Combine the cooled cola reduction, cilantro, scallions, jalapeño, lemon zest and juice, lime zest and juice, garlic, vegetable oil and 1 teaspoon salt in a blender. Blend on high speed to make a smooth, bright green sauce. Pour into a large bowl and set aside.
  3. Season the wings all over with 2 teaspoons salt and a few grinds of pepper. Oil the grill grates. Grill the wings, turning as needed, until crisp, golden brown and cooked through, 16 to 18 minutes.
  4. Transfer the wings to the bowl with the sauce and toss to evenly coat. Return to the grill and continue to cook, turning as needed, until crisp and charred in spots, 3 to 5 more minutes. Serve with lemon and lime wedges.
