Slow Cooker Pineapple Habanero Pulled Chicken

Ingredients

  1. 5 pounds boneless, skinless chicken thighs
  2. 1 1/2 pounds frozen diced pineapple
  3. One 28-ounce can crushed tomatoes
  4. 1/3 cup fresh lime juice
  5. 2 teaspoons ground cumin
  6. 1 tablespoon smoked Spanish paprika
  7. 5 large cloves garlic, crushed
  8. 3 bay leaves
  9. 1 to 2 habanero chiles, seeded and minced
  10. 1 large Spanish onion, diced
  11. 3 teaspoons kosher salt
  12. 1/2 teaspoon freshly ground black pepper
  13. 1/3 cup finely chopped fresh cilantro
  14. For serving: Rolls and corn tortillas, shredded red cabbage, sour cream, sliced avocado, chopped fresh cilantro, crumbled queso fresco, lime wedges and hot sauce

Instructions

  1. Place the chicken thighs in the base of a slow cooker. Add the diced pineapple, tomatoes, lime juice, cumin, paprika, garlic, bay leaves, habaneros, onion, salt and pepper. Stir ingredients to combine well.
  2. Cover and cook until the chicken is fully cooked and can be easily shredded, on high for 4 hours or on low for 6 hours.
  3. Remove the bay leaves and discard. Remove the chicken to a platter and use 2 forks to shred. Stir the chicken back into the sauce along with the chopped cilantro.
  4. Taste and adjust with additional salt and pepper.
  5. Serve with rolls, corn tortillas, and other toppings as part of a sandwich or taco bar.

I liked this for flavor, but I didn’t like all the extra liquid. After reading the reviews and the comments, I actually reduced the liquid with the tomatoes and the pineapple, but it still came out watery. I took out the sauce with a ladle and let it reduce a bit before I added it back in with the chicken. I put in a jalapeno instead of the habanero since my friend doesn’t like super spicy. Next time I make it, I will go full spice. It does make a lot, so it’s perfect for a party, a family, or someone who wants lots of leftovers.

if i read all the reviews first i may not have made this. So i’m really glad i tweeked it for my tastes!
instead of crushed i used diced tomatoes, then added my salt & peppered chicken breasts (2). then 4 de-seeded habaneros (minced), 4 smashed cloves of garlic then layered my veggies. 2 vadalia onions chopped large, 2 yellow peppers also chopped large. then frozen chunked pineapple. then another layer of more veg & pineapple. all spices went on top with the bay leaves and fresh squeezed limes. and it came out great. served over rice w/a bit of sour cream and leftovers were in tortillas with cheese & fresh cilantro!

Very soupy after adding a whole 28oz can of crushed tomatoes. It overwhelms the flavor of the dish as well.

Fantastic! Good blend of spicy and sweet! I made it with pork loin and it was wonderful. I used haft the about of pork than what the recipe calls for in chicken it was great. Put the pineapple, pork, habanero mix on soft tacos with all the fixings. Yummy

Such a waste of time & money. Not sure what they were eating when the show aired, it couldn’t have been this recipe!
