Raspberry-Chicken Salad

Ingredients

  1. 1/4 cup raspberry preserves
  2. 2 tablespoons olive oil
  3. 1 tablespoon white wine vinegar
  4. 1 teaspoon Dijon mustard
  5. Salt and ground black pepper
  6. 2 tablespoons minced scallion
  7. 1 cup fresh raspberries
  8. 4 cooked chicken breast halves, cut into 1-inch pieces
  9. 4 cups chopped Bibb lettuce
  10. Nut bread
  11. Cream cheese

Instructions

  1. In a medium-size bowl, whisk together raspberry preserves, oil, vinegar, Dijon mustard and salt and pepper. Add scallions and raspberries to vinaigrette. Add diced chicken and toss to combine with vinaigrette. Arrange lettuce on individual plates. Spoon chicken mixture over lettuce just before serving. Serve with nut bread and cream cheese, if desired.

I found the dressing to be too sweet for my liking, so I added only a couple of spoonfuls to the chicken to infuse it with flavor, then thinned out the rest with a little more olive oil, raspberry wine vinegar, apple cider vinegar, salt and pepper and a tad more mustard. I whisked the mixture together to reveal a wonderful sweet/savory raspberry vinaigrette. I put together a salad with Romaine and shredded veggies and the fresh raspberries, tossed it with the dressing, then served it on plates topped with the chicken and some almonds.

This was very tasty for a light meal. I cooked the chicken with some of the raspberry preserves and threw on a few toasted walnuts. My boyfriend gobbled it up!

This was just as easy as it sounds. Light, perfect and easy. I even sent this to my mom in law. She would LOVE this! I really like the sweet of the jam with the bibb lettuce. I would make this again and again! Enjoy!

I am on an extremely tight “starving artist” budget and was thrilled when I found this recipe because it had such great reviews and I had most of the items in my pantry. I made the dressing. It was way too thick for a vinegarette and was a little on the funky side. I attempted too fix it by adding a little more of this and a little more of that. Before you know it, I had a bowl full of funky, thick dressing (that does not taste good with chicken). If you are on a budget, skip this one and come back to it when you can afford to experiment.

…..this one didn’t go over well with either me or my husband. After reading all the great reviews, I figured this would be a sure thing but it turned out to be something we threw out and ordered pizza. I followed instructions to the letter, but it just wasn’t good. Sorry, Robin!!

the dijon and raspberry are surprisinglgy a really great combination of flavors. eat them like chicken with lettuce wraps, easy and healthy!
