Ingredients
- 1/4 cup low-fat plain yogurt
- 1/4 cup low-fat buttermilk
- 1 tablespoon mayonnaise
- 2 tablespoons cider vinegar
- 1 teaspoon curry powder
- 1 clove garlic, chopped
- 1/2 teaspoon kosher salt
- Freshly ground black pepper
- 2 cups grilled chicken, roughly chopped
- 1/2 Granny Smith apple, skin on, cored and chopped into large cubes
- 3/4 cup red grapes, halved
- 1 cup loosely packed watercress or flat-leaf parsley, chopped
- 4 large leaves romaine lettuce
- 1/4 cup raw almonds, chopped
Instructions
- Combine the yogurt, buttermilk, mayonnaise, vinegar, curry powder, garlic, salt and some pepper in a medium bowl and whisk to incorporate. Combine the chicken, apple, grapes and watercress in a large salad bowl. Pour the dressing over and toss to thoroughly coat. Taste and adjust the salt, pepper and curry powder as desired. Arrange a lettuce leaf on each of 4 salad plates. Divide the salad evenly among the plates and top with chopped almonds.

This salad was a hit with my family. I couldn’t find watercress so I substituted cilantro. I also added thinly sliced radish and I used vanilla flavored yogurt. Delicious!
Absolutely delicious ! I modified a bit because I don’t have grapes or Granny Smith- so I used a pink lady apple, celery and a little sprinkle of red onion. I’m also dairy free so I used equal part plain coconut yogurt and mayonnaise. Loved it ! I also needed to make this quickly so I used Trader Joe’s canned chicken so I pored half of the dressing off to the side. I guess I’ll have to make it again tomorrow. Yum !
Yum! I am not a fan of a lot of mayo, and this recipe is great. My teenage son loves it, and I feel great knowing that he is eating something that is good for him. I highly recommend and recommend exactly as written!

This is great! I made it last night according to the recipe with only the omission of the watercress/parsley. The salad is a great balance of flavor and crunch. I will definitely be keeping this in my recipe box.
My husband loved it and he usually prefers chicken “the regular way.” I suggest starting with less curry and add as needed, especially if you are not used to using it. I also added mandarin oranges and cranberries and walnuts (and skipped the almonds). It’s a very good twist on “the regular way” chicken salad is made.
