Thyme Smoked Chicken Breasts

Ingredients

  1. 6 chicken breast halves, skin intact
  2. 1/2 bunch fresh thyme, tough stems removed
  3. salt and pepper to taste
  4. olive oil for coating chicken

Instructions

  1. Loosen skin on each chicken breast on one side and tuck a few sprigs of thyme underneath. Season with salt and pepper and rub chicken breasts with oil. Arrange chicken pieces on rack one inch apart, skin-side up, to allow for smoke circulation. Smoke on medium heat for 10 minutes per half pound. Remove from smoker, garnish with fresh thyme and serve.
