Smokey Salt and Pepper Drumsticks

Ingredients

  1. 1 tablespoon olive oil, plus more for brushing the grill
  2. 12 chicken drumsticks
  3. 1 tablespoon black peppercorns
  4. 1 tablespoon chipotle sea salt
  5. 6 cloves garlic, crushed
  6. BBQ sauce, for serving, optional

Instructions

  1. Prepare a grill for medium-high heat. Brush the grill with olive oil to coat.
  2. Put the chicken in a resealable plastic bag. Crush the peppercorns in a mortar and pestle and tip into a bowl. Add the salt and garlic and mix. Add the mixture to the bag with the chicken and drizzle over the olive oil. Seal the bag and shake to coat the chicken.
  3. Grill the drumsticks, turning every 5 to 7 minutes, until cooked through, 30 to 35 minutes. Serve with BBQ sauce if desired.

Simple and delicious! Definitely something I will make for a crowd! To make chipotle salt, mix 3/4 tsp chipotle powder with 1/2 cup of sea salt.

Simple and delish! Per a suggestion from another review, I broiled them for about 5 mins after pulling them of the grill. Extra crispy!

These are a crowd pleaser and so easy.  I make my own chipotle lime salt (Bon Appetit) and just grind up a heaping TBS of pepper.  Also, quite by accident, I found that putting the legs in an aluminum pan after bbq and putting them under the broiler on high for about 5 minutes (maybe more) gives the chicken legs the perfect amount of crisp.  Using this method from now on!

Very easy, and very delicious.  I love that these are grilled and not fried.  I’ve never made wings, but my cowboy loves them, so I thought I’d try Ree’s recipe, as she’s never led me astray.  He said they were the best he’s had.  This recipe is certainly a keeper.
