Ingredients
- 1/2 cup olive oil
- 2 tablespoons untoasted sesame seeds, white or black
- 2 tablespoons tahini
- 3 cloves garlic, minced or grated
- Zest and juice of 1 lemon
- Hot sauce, optional
- Kosher salt and freshly ground black pepper
- 8 chicken thighs, bone in and skin on
- 3 tablespoons finely chopped parsley
Instructions
- In a mixing bowl, whisk together the olive oil, sesame seeds, tahini, garlic, lemon zest and juice and hot sauce to taste if using. Season with salt and pepper. Add the chicken and marinate in the refrigerator for 1 hour and up to 8 hours.
- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Remove the chicken from the marinade and place on the indirect heat side of the grill, skin-side up. Close the grill and cook until golden brown, 15 to 18 minutes. Flip and move to the direct heat side of the grill to char on the other side. Cook until the skin is charred and crispy and the chicken is cooked through; the internal temperature should be 160 degrees F, 2 to 3 more minutes. Remove from the grill and let rest for a few minutes. Garnish with the parsley before serving.

Well it was chicken, and I added extra hot sauce per others reviews. It was still bland. I love Michael Simon. This just didn’t work for me either
Turned out great by topping with a little sweet chili sauce and pairing with Rachael Rays “Special Fried Rice” and a Korean wilted cucumber salad.
A little bland. I would sprinkle some everything bagel seasoning on and don’t be shy with the hot sauce
This was very tasty. I added plenty of seasoning to my marinade so it was not at all bland for me. Really enjoyed this marinade. Tahini was a very nice tough. Highly recommended.
No flavor. It’s a lot of work for bland chicken

Can you cook this in the oven? If yes at what temperature and for how long?
Absolutely delicious! Didn’t make the waffles (will try later when I get a cheap waffle maker) but everything was amazing. The baba ghanoush was delicious and easy. The chicken was great as well. So easy to put together. The salsa/salad was amazing especially the next morning over and egg and toast. I did pan fry some halloumi cheese as a substitute for the waffles. This recipe will be on repeat!
Good and easy. Also made the baba gouache, which was amazing. Didn’t make the waffles but grilled pita bread instead. I made the salsa that was on the waffle recipe but used red peppers instead of tomatoes, added cucumbers and regular black olives. It was delicious, but the baba gouache was my favorite- it was my first time tasting that type of dip.
Really good! Only marinated an hour and a half, I’m sure longer would be even better.
