Prosciutto-Wrapped Chicken Kebabs

Let’s face it, boneless, skinless chicken breast can sometimes be bland. These skewers get a major flavor boost from wrapping the chicken in thin slices of prosciutto.

Ingredients

  1. Vegetable oil, for the grill
  2. 2 pounds skinless, boneless chicken breasts, cut into 24 pieces (about 1 1/2 inches each)
  3. 1 tablespoon extra-virgin olive oil
  4. 1 tablespoon white or red wine vinegar
  5. 1 teaspoon chopped fresh rosemary
  6. 1 clove garlic, grated
  7. 1/4 teaspoon red pepper flakes
  8. Pinch of kosher salt
  9. 4 ounces Fontina cheese, cut into 24 cubes (about 1/2 inch each)
  10. 24 thin slices prosciutto (about 6 ounces)
  11. 1 pint grape tomatoes

Instructions

  1. Preheat a grill to medium high and brush the grates with vegetable oil. Toss the chicken with the olive oil, vinegar, rosemary, garlic, red pepper flakes and salt in a large bowl. Place a cheese cube on a piece of chicken and wrap tightly with a slice of prosciutto. Repeat with the remaining cheese, chicken and prosciutto.
  2. Thread the chicken bundles onto eight 10-inch skewers along with the tomatoes. Grill the kebabs, covered, turning occasionally, until the prosciutto is crisp and the chicken is cooked through, about 10 minutes.

It’s a delicious bite! Cut chicken into about 1 inch pieces and cut small cubes of cheese for easier prep. I pounded the chicken a bit before cutting into pieces. Skewer through the cheese! I used Gouda instead of Fontina, and I marinated the chicken for a few hours before grilling.

Absolutely delicious you can tell there is Rosemary but I learned to cut the chicken into smaller pieces so that the prosciutto wouldn’t burn. Next time I do this I’m going to make even smaller pieces to toss into some pasta or alongside some seasoned rice. Over all my husband and I thought it was tasty

Delicious! A bit hard to keep assembled, so next time I’ll insert a toothpick to keep the prosciutto, chicken, and cheese together.

The end result was really scrumptious. But I (like others) found them messy to build. I ended up doing individual bites with toothpicks to hold them together. Again, they were tasty enough I would make again but prepare for messy, slippery making of them.
