Ingredients
- 2 1/2 pounds chicken breast
- 2 1/2 teaspoons fresh minced garlic
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons ginger powder
- 1 1/2 teaspoons ground black pepper
- 1 1/2 teaspoons ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed red pepper
- 6 ounces cooking oil
- 2 ounces lemon juice
- Pinch saffron
- 4 cups plain yogurt
- 1/2 ounce white vinegar
- 2 1/2 teaspoons dry dill
- 2 1/2 teaspoons chopped garlic
- 2 teaspoons ground black pepper
- 1/2 teaspoon salt
- 1 tomato, cut into quarters
- 1 purple onion, cut into quarters
- 1 bell pepper, cut into quarters
- 4 pitas, warmed
- Sumac and ground coriander, for sprinkling
- Microgreens, for garnish
Instructions
- For the chicken: Cut the chicken into 2 1/2-inch cubes and put in a bowl. Add the garlic, salt, ginger powder, pepper, coriander, paprika, crushed red pepper, cooking oil, lemon juice and saffron. Mix together and set aside.
- For the yogurt sauce: Mix together the yogurt, vinegar, dill, garlic, pepper, salt and 3 ounces water in a bowl and set aside.
- For serving: Preheat a grill.
- Put 7 pieces of chicken on each of 4 metal skewers. Place 2 of each piece of each veggie on each of 2 metal skewers.
- Grill the chicken and vegetables, rotating every minute until it is cooked to your desire, about 7 minutes. Place the grilled chicken and vegetables on the pita bread. Pour the yogurt sauce on top. Sprinkle on sumac and coriander and garnish with the microgreens. Enjoy!
