Ingredients

  1. 2 1/2 pounds chicken breast
  2. 2 1/2 teaspoons fresh minced garlic
  3. 1 1/2 teaspoons salt
  4. 1 1/2 teaspoons ginger powder
  5. 1 1/2 teaspoons ground black pepper
  6. 1 1/2 teaspoons ground coriander
  7. 1/2 teaspoon paprika
  8. 1/2 teaspoon crushed red pepper
  9. 6 ounces cooking oil
  10. 2 ounces lemon juice
  11. Pinch saffron
  12. 4 cups plain yogurt
  13. 1/2 ounce white vinegar
  14. 2 1/2 teaspoons dry dill
  15. 2 1/2 teaspoons chopped garlic
  16. 2 teaspoons ground black pepper
  17. 1/2 teaspoon salt
  18. 1 tomato, cut into quarters
  19. 1 purple onion, cut into quarters
  20. 1 bell pepper, cut into quarters
  21. 4 pitas, warmed
  22. Sumac and ground coriander, for sprinkling
  23. Microgreens, for garnish

Instructions

  1. For the chicken: Cut the chicken into 2 1/2-inch cubes and put in a bowl. Add the garlic, salt, ginger powder, pepper, coriander, paprika, crushed red pepper, cooking oil, lemon juice and saffron. Mix together and set aside.
  2. For the yogurt sauce: Mix together the yogurt, vinegar, dill, garlic, pepper, salt and 3 ounces water in a bowl and set aside.
  3. For serving: Preheat a grill.
  4. Put 7 pieces of chicken on each of 4 metal skewers. Place 2 of each piece of each veggie on each of 2 metal skewers.
  5. Grill the chicken and vegetables, rotating every minute until it is cooked to your desire, about 7 minutes. Place the grilled chicken and vegetables on the pita bread. Pour the yogurt sauce on top. Sprinkle on sumac and coriander and garnish with the microgreens. Enjoy!
