Ingredients
- 2 teaspoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup chopped roasted red peppers, drained (from water-packed jar)
- 1 teaspoon liquid smoke
- 8 (6-inch) corn tortillas
- 1 1/3 cups shredded pepper jack cheese
Instructions
- Preheat oven to 400 degrees F.
- Heat oil in a large skillet over medium heat. Add chicken and saute 5 minutes, until browned on all sides. Add roasted red peppers and liquid smoke and cook 1 minute to heat through. Arrange tortillas on a flat surface. Top each tortilla with an equal amount of chicken mixture, to within 1/4-inch of the edges. Top chicken mixture with cheese (1/3 cup of cheese per tortilla). Roll up tortillas and place on a baking sheet. Spray with cooking spray and bake 10 minutes, until cheese melts.

I cooked the chicken in a wok, and that was a bit faster. I used tortillas that were half corn and half wheat. They didn’t crack. This is a tasty dish!
I prefer adding salsa instead of peppers, which add sweetness, but this is quick, easy, and good. Some hints for others – corn tortillas will crack or fall apart if not VERY fresh. They have a freshness date on the package – check this when buying. Also, you can use any leftover chicken and shred it. adding the cheese and/or salsa or peppers will give added moisture.

I love this recipe. Tasty with few ingredients. My kids even like it, with the roasted red peppers and all. I served with a little fresh salsa and voila!
I made this years ago and forgot to review it. The taquitos have amazing flavor and they are easy to make. I made them for a big party last time, and they were a hit!!!
This recipe is a hit in my household! I will say, that I use flour tortillas instead of corn tortillas (my kids do not like the corn tortillas). Very tasty and healthy!
Loved it… My 5 yr old, who eats practically nothing, loved it and said she’d eat it again!!!! I guess I can add this to the other 3 things she’ll actually eat… but she said minus the peppers. Also, used whole wheat tortillas for wrapping.
If you’re using 8 tortillas and each one requires 1/3 cup of cheese, then wouldn’t you need 2 2/3
cups of cheese rather than the 1 1/3 cup as stated in the recipe? Also, I suggest not only draining the canned peppers, but patting them dry too. I would also cut the chicken a bit smaller than 1 inch. Just saying…….

Good family meal! My corn tortillas fell apart but still tasty. I used leftover chicken from Robin’s Roasted Chicken with Smoky Orange sauce.
